This place is always amazing! It’s our favorite restaurant in Des Moines Metro for outstanding flavors and unique dishes! The drinks and service are exquisite. We have been many times. We recently went for our anniversary and splurged with the chefs menu and an extra dessert! See the menu image to see what we had. The menu changes so it will likely be different when you go, but everything has been delicious.
I wish they would bring the beet and marshmallow salad back - it was soooo good!

It was certainly an experience. The staff is knowledgeable and can make recommendations. Do the tasting menu and just let it happen.

Had a fantastic experience at their Second Saturday featuring a 5-course summer inspired dinner! The food was creative, light, and refreshing —exactly what we needed on a hot summer day. Our server was attentive and knowledgeable, and we were welcomed in by other staff as well. The restaurant took all the precautions needed to feel safe during Covid-19. Loved my meal here and hope to return.

I had the most magical experience at Proof. Flying in on business late, I couldn’t find anywhere to get a decent dinner. I called up Proof hoping to just get a to-go order but not know what they were. When I made it to the restaurant, they insisted I stay and eat there. It was among the most delicious food and experience I’ve had in life.

Food & service are top notch! Drinks were amazing, service was amazing & food was beyond amazing! Highly recommend it! Chef Wilson is doing some amazing things check him out!

This was one of the best meals I’ve ever had. We did the tasting menu with wine pairing and it was unbelievably divine! In fact, one of the courses was in the top 3 of the best foods I’ve ever eaten, up with Nobu in New York and Roses Luxury in DC. And the service staff was amazing- attentive, knowledgeable, friendly, and approachable. If you want to spoil yourself, run don’t walk.

Really good menu; interior is modern yet inviting. Innovative and fresh menu pairings; Attention to detail was fantastic. Do not overlook the drinks as the cocktail menu is engaging plus the bartender is amazing - made one of the best Old Fashions I’ve had in quite a while. 100% looking forward to coming back.

This place always has delicious food. The vegan veggie tagline was not available and the chef himself came out to apologize and offered to make me a different dish.. it was simple and amazing!

We had been wanting to try this place forever and when we finally go we find out they're closing in two weeks! Which is super disappointing considering how great everything was. The best fish my husband has ever had and the best chicken I have ever had. Everything was so flavorful and beautifully plated. Please stay open!

My wife and I recently went here when my business partner and his wife came in town. From what I understand there is now new ownership as well as a new head chef. It did not disappoint! Unbelievable attentiveness from our waitress, the food was perfect and the drinks were great (even though one was a little too “unique” for my partner 🤣, but I liked it!). The owner even came over and we had a great conversation for 10 minutes or so. We are looking forward to coming back.

Proof is hands-down the best restaurant in Des Moines (truly better than the other fine-dining establishments). The prix fixe they offer is always amazing, and I have never had a better 10 course meal than at Proof. The executive chef is absolutely incredible, humble, and dedicated to his craft, and he will surprise you and your taste buds with each new visit. His entire team is also incredible. The menu changes periodically and will never disappoint. There is always something for everyone, with dishes inspired from all over the world. Amazing food, amazing service, and a great atmosphere!

We had the fall tasting menu with the wine/cocktail pairings and it was absolutely amazing. The plates were beautiful and tasted great. I highly recommend doing the wine parings with the tasting menu. The staff was so nice and friendly. We can't wait to go back.

We had the 4 course dinner for our anniversary tonight. Every course was delicious, drinks were great and every staff member we encountered was friendly. We had a great night and will definitely be back!

So much change can sometimes fall flat - not the case here! The team is almost the same as before, the place has a new look - just fresh but not very different. Still the same, but improved. The beer, wine, and cocktail list is expanded with some fun refreshing choices on the drink menu. Honestly I never see their regular menu so cannot comment much, but just asked the kitchen to have fun -- they exceeded my expectations with short notice as well. I am impressed and trilled.

Finally got back to Proof after the reopening. Same friendly bar service. Same amazing cocktails -- well technically they are constantly changing the cocktail list but they're still amazing and if you ask they'll make any of your old favorites providing they have the ingredients. They now have a much expanded beer list. Same excellent cheese and charcuterie board, probably a little bigger portions of each than before. Still not a cheap place to go for a few drinks or dinner, but I'm happy to ignore the prices when I come here.

One of the best meals I've ever eaten. Had the cheese plate with the chickpea crackers (hard to describe but delicious). Then the gnocchi with sage and brown butter. Service was superb, very attentive and friendly. Cocktails were out of this world. Go for the "Bartender's Roulette"--you won't be disappointed.
