We’ve always enjoyed exploring local coffee shops over chain businesses. This spot offers hand-poured coffee, and they personally source their coffee beans. If you’re a fan of acidity in coffee, this place is worth checking out. Reasonable price of pour over. The owner is friendly too.

Being an avid lover of coffee and working in the business in the past I am always looking for the best bean. It’s more than just a happy smile behind the bar, it’s where the bean is from, how it’s handled, roasted and loved by the maker. Coffee Conspiracy does all that and more, you can tell by the first sip that genuine care and knowledge went into crafting the coffee and lattes. Eddie is knowledgeable in what he’s doing, sharing fine crafted coffee and opening minds. At an affordable price, you’re helping a local business stay afloat while also getting to learn the truths in the world. Definitely my favorite cup in Santa Cruz, I have tried them all and this one never misses.

5G is definitely killing the bees. And the people. But it isn’t effecting the coffee at this place because it’s pretty bomb. Did I say bomb? I meant amazing. Before our trip out of Santa Cruz, we walked here for a coffee and didn’t realize we were entering a community. The owner got to know us in our short time there and it’s the most community I’ve felt since being in California, and I’ve stayed at 2 hostels so far. I spend time honing my own coffee craft at home, but if I lived here I know I would spent time here working and learning about single origin coffee (and conspiracies).

The coffee scene here in Santa Cruz seems important to the culture of the city. There are so many amazing places, and Coffee Conspiracy Co is a must stop.

The espresso is incredibly smooth and flavorful and the atmosphere is super fun. With themes of matrix, Orwell, and X files, it is an intriguing and fun place for an expertly roasted and pulled espresso. 10/10

Absolutely stellar coffee – a solid 11/10! Eddie, the owner, is such a rad guy. He is the driving force and visionary behind a brand that has inspired me both in my personal and professional life. Santa Cruz is truly fortunate to have this gem of a business!

After some online research, we found this coffee shop to be one of the two shops in Santa Cruz with a five star rating. We stopped by on a Sunday morning and were greeted by the very personable and helpful owner…… obviously takes great pride in his coffee products …. We ordered two drinks to go (including the Shapeshifter) and the taste and quality were exceptional. We also bought three bags of freshly ground coffee and one bag of beans for gifts and for ourselves. We have continued to thoroughly enjoyed the taste of the coffee here at home. We highly recommend trying this coffee shop when in the Santa Cruz area. You will not be disappointed.

Coffee Conspiracy is by far the best coffee shop in Santa Cruz! Eddie is personable, knowledgeable and fun to talk to. His drinks menu is unique and perfectly crafted. Our favorite is Simulation Theory, which is cozy and delicious! We have also started buying his hand-roasted beans and brewing our own cold brew. We very much look forward to seeing Eddie every week for our coffee fix!

Coffee Conspiracy is by far the best coffee in Santa Cruz. Regardless of what single origin coffee Eddie is brewing the quality is top notch. Every coffee is sourced, roasted, and brewed by the man himself.

I have been going here since the day it opened multiple times a week and have yet to ever be disappointed. My personal favorite is an iced Simulation Theory with oat milk but I have tried nearly every beverage and the owner Eddie's expertise really shines through every cup.

I have watched hundreds of interactions and every customer is treated at the highest level. There is no place in Santa Cruz where you can get this level of coffee and customer experience and trust me I have explored plenty. The coffee that's consistently rotating and experience is truly unique.

While the name hints at conspiracy theories, they're never pushed on you. You're free to simply enjoy the incredible coffee and atmosphere. The choice really is yours

I live and work in Watsonville and I make my way to Coffee Conspiracy almost every morning to get a coffee from here. Sitting in and drinking a Simulation Theory makes waking up early and sitting in traffic worth it. Such a great way to start my day.

The remarkable flavor these coffee have is insane and something you have to experience to understand just how good they are. Whether you like your coffee sweet or not, there’s something for everyone. I promise you will not be disappointed.

Eddie (the owner) takes so much pride in every drink he makes. I’ve seen him pull espresso shots and say “I’m sorry, I didn’t pull a good one let me redo that for you”. Regardless of when you go, you will consistently get a perfect drink.

A MUST TRY. If you want to change your perception of coffee, Eddie is the guy to show you. If you like syrups in your coffee the maple rosemary is delicious, and different. I’m a fan of the pour overs. He roasts the coffee himself. The team is welcoming, friendly, and know what’s up when it comes to coffee. I don’t live in Santa Cruz, but I stop here every time I’m in town.

This is the coffee shop we needed downtown! This cleverly-themed little shop is surprisingly chill, with plenty to keep you entertained while you wait for your drink... The menu alone will make you smile. But maybe most notable is the thought and care put into the gorgeous drinks! The pour-over coffee is unlike any flavor I've had before; though it's really hard for me to not order the NZT-49. And if I wasn't diabetic I would be all over the drinks with those amazing syrups, honey lavender and maple rosemary and brown sugar cardamom!!!

It's always a treat to chat with the owner, who has maintained the small-town vibe and always genuinely wants to know how you're doing. There is a reason that everyone gives this place 5 stars.

Despite the owner being on vacation when I visited leading to limited choices from the menu, my Oat Milk Nitro Cold Brew with Rose syrup was one of the best cold brew drinks I’ve had. Super refreshing and everything was balanced. 4.8/5.

Coffee Conspiracy is my #1 go to coffee shop in all of Santa Cruz County. The single origin blends featured in the shop always contain a rich and diverse combination of flavors that always leave me wanting more. The drip coffee brewed on the only Ground Control in Santa Cruz and is smooth and flavorful. If you want something stronger, you can opt for a hand pour-over.

His latte drinks are incredible as well. Eddie uses high quality, grass-fed milk local to Monterey county and you can really taste the difference. My favorite drink is the NZT-49 which features a cacao butter with an amazing flavor. His unique drinks are unlike anything I've ever experienced.

Eddie is an amazing guy and you can always count on him to keep you up to date on the most esoteric knowledge and conspiracy theories. If you are a fan of coffee, conspiracies, or both then this place is a must visit.

Eddie acknowledges you from the jump when you walk into his shop. There's a smile, a twinkle in his eye, and typically, a fun comment that makes you laugh and think, "how far gone is he?"

And he is gone... he's gone deep into his passion which is both humbling and inspiring. He's taken an idea and Morphe(d)(us) his love of coffee into an amazing place to enjoy coffee and hang.
He takes his craft very serious, but he's lighthearted as to not to come off pretentious, and if you listen closely, he's serving up kernels of truth alongside the best coffee in town.

The only cons lie in the name, Coffee Conspiracy. which is a testament to resilience, creativity, and a sprinkle of wonkiness that makes you feel grateful not everyone has succumbed to corporate greed.

A friend of mine took me two coffee conspiracy for the first time to get a cup, I was greeted by Ed the owner roaster and immediately felt like a part of the crew. He knows what he’s doing. He makes amazing drinks. He makes me wanna go get a cup of coffee every day because of how passionate he is about his product go down and get a cup. I guarantee you’ll be hooked get red pilled.

This is the best coffee I've ever had! I don't really know any other Santa Cruz coffee shops with specialty coffee that's more than just some sugary syrup added in. This is really unique and much needed in our town! My favorite is the NZT-49, it has a very tasty turmeric chocolate sauce that is mild and not overpowering. It also has MCT oil - I never thought I'd enjoy oil in a coffee, but it's heavenly. I also love the Awakening with ginger and turmeric - again it's not overpowering like in so many other coffee places. The syrups are homemade, and they aren't just tasting like sugar like everywhere else! The owner is so invested and kind - the whole place has a great atmosphere for that reason. Check it out!

Hands down best coffee in town. They really care about quality ingredients. I was so happy to finally find a coffee place that offers raw milk. This place makes me proud to live in Santa Cruz!
