From a small barn like structure the folks at Destileria Andina are making waves by creating some truly remarkable spirits. If you happen to be in Ollantaytambo contact them for a tasting, it will surprise you, and trust me you will leave the with a bottle of Matacuy the stuff is absolutely wonderful. The mountain views alone make a visit here and absolute must. Kudos to Andre for a knowledgable and engaging tour around the premises and the delicious drinks Recommended!

Destilería Andina was an unexpected treat. Located in the organic farm of El Albergue, it is well worth a visit. The distillery makes 2 versions of their Caña Alta product (a sugar cane liquor known in the Andes as cañaso) and an after dinner aperitif (known locally as compuesto) called Matacuy. The Azul label Caña Alta is very smooth, comprable to a rum or vodka. For those with a bartending background, the uses for it seem limitless. The Verde label Caña Alta is much more complex in flavor (most similar to a tequila, but still very different in overall flavor). The Verde was my favorite of the two. The name Caña Alta comes in part from the fact that they are using the highest grown sugar cane in the world (from 2 different regions of Perú, thus the two different products). The Matacuy uses 11 different herbs, extracted using their Caña product then blended and filtered. The staff of the distillery was happy to give me a tour of their operations with a brief history of cañaso in the Andes. They seemed to be inspired by the land and them and have numerous ongoing experiments on their shelves. From local hardwoods to fish from Lake Titicaca to the local Jora corn (the base for Chicha) the possibilities seem limitless to them. They have bottles of all of their products available for purchase at the distillery and the front desk of El Albergue. They are also served in their restaurant at El Albergue (as well as restaurants throughout Cuzco and Lima, I found out). It was really great being able to see all the different elements of the distillation process. These guys really seem to have a good thing going. I hope to see it in my favorite restaurants in the U.S. someday soon.

The tour of this small distiller with Sandro is fantastic! I learned so much as he explained how they experiment to develop new spirits. So many great tastes and smells! Very interesting.

A small distillery making Caña Alta. A fun quick tour explaining their liquor where they let you try several. Definitely worth stopping by if you're in town. Check out the shelves of ingredients for experimenting (See photo).

Had an amazing time with Sandro making our own custom Salca with cañazo and fresh botanicals/herbs straight from the garden! Tried the lineup of Destilería Andina products and loved every one of them—especially the cañazo reposado that is aged in oak barrels. Would highly recommend this experience to anyone staying at Hotel Albergue, or just passing through to Machu Picchu!

The sacred valley is in for a real treat when this distillery gets going. Right now they are producing mainly for the hotel, but very soon they will be moving to more formal digs, which will allow them to produce for a broader audience. My wife and I had the pleasure of being shown around their current facility by Andre. Andre is amazing. He has such a passion for all that is currently going on with the development of their spirits! There is a good reason he plays a major roll in this distillery as he is personable, knowledgeable, and extremely passionate about his profession. Best of luck moving forward and I look forward to the day when your spirits land on shelves in Chicago.

Tomar en cuenta que el ingreso es por la puerta de kuska school. No hay señal de Destilería Andina desde el callejón.

Increible lugar,, si te quedas en Ollantaytambo tienes que ir a visitar la destilería y el albergue, caminando desde el centro pegado al paredón por el callejón Santa Rosa
