Evolve Spirits Bar

What a fantastic, unique bar in the heart of Hobart.
We were recommended this as a must-visit location when in Hobart and we were awestruck and delighted.
The manager was amicable and very informative and the snacks hit the spot.
The fossils highlighted just made it spectacular.

Unbelievably stunning fossile collection!!! Superior aesthetics with amazing drinks - we definitely had one amazing night in here. Had the whisky tasting flights and it was fabulous. Queen bee the cocktail was okay (a bit too sweet). Also nice table service and it’s not too busy or noisy - really suitable for a few drinks and conversation to just wind down for the night. One of the most worth visiting bar in Hobart.

The theme of fossils, you can feel time, history and mystery there, it’s cool, special and distinctive. The staffs are professional, hospitable and careful, the drink is nice, and the music is beautiful and atmospheric in the air. That was a totally different experience for me, the bar is definitely worth to try in the city.

Nevertheless to say, Evolve is the coolest bar I have ever seen. Numerous of authentic fossils prove this bar owner’s taste, let alone decency of cocktails. I ordered two drinks in the stirred and stiff menu and my wife ordered on in the Built, fruity and refreshing menu. You are also able to find one drink close to your heart in the 100ish-page wine/spirit menu. We enjoyed the last night behind the ancient turtle pillar in Hobart during this trip.

They were very kind and gave us an extra dram of whisky because they believed they hadn't been attentive to us as a table. We didn't think they had been bad at all, but clearly they want to go over and above to make sure you enjoy your experience with them. Well, it worked! We loved this spot and will definitely return!

This was a great experience. We only stayed for drinks and a round or two of 500(our cards)
We stumbled across this establishment after a big day out, and it was great to unwind, low lighting soft plush seats and a HUGE whiskey selection. I loved the prehistoric collections spread about, it's very engaging.

Cocktails... These guys are the experts! Their menu is fabulous, and they can also do anything else you ask for! If you don't care for cocktails, they also have the biggest spirit and wine list I have ever seen. Fabulous vibe and great service

Very unique bar in Hobart with water views and plenty of fossils at your table, makes for an interesting experience. A very wide range of liquors and experienced staff, cocktails are excellent.

Lovely place!
The spirit menu is huge, the place is spectacular with Fossils that are respected as well as in a museum.
We had the chance to be welcome by Nikkie, she made our venue special with perfect knowledge/ advice about whiskies and kindness :)
The food is great as well.
I highly recommend!!

A gorgeous whiskey bar. Location is right on the water. A massive choice of whiskies to choose from with such variety in prices. They also serve cocktails, beers, and gins etc.... a place where any alcoholic beverage will be served to you with a smile and class. Absolutely enjoyed the ambiance, decor and sounds. Left feeling relaxed, happy and walking on cloud 9

Absolutely love this bar, so far my favourite in Hobart.
Well-designed menu with all kinds of drinks. The staff are happy to make the drinks based on your personal preference. My friend and I had a great time there. The staff were super friendly and passionate about explaining the drinks to us. I had Spring Rose, which I loved - a little sweet, fruity and refreshing. The fossil inside the tables is quite interesting to read.

The bar staff were so helpful. The cocktail and spirits menus were absolutely amazing, a great way to try a range of different drinks. Their Tasmanian spirit selection is thorough, and goes beyond the usual two or three distilleries. The free popcorn is very tasty too.

Its a 'must go' whisky bar when you are in Hobart. Its like whisky wikipedia , also got a variety of gin, cocktails. The decoration is also quite unique.

Well decorated and well appointed cocktail bar, offering very tasty morsels.

Everything that we ordered was delicious and the cocktails were well done.

There are a number of small tables that are not that great however the table inserts are rather interesting.

As an after dinner drink location, it was perfect for us. The drinks menu and choices are extensive and exceptional. I personally went for the Overeem tasting selection and as testament how good it was, bought a bottle the next day.

Great bar right on the waterfront of the working harbour. Friendly experienced staff. The range of whiskey is unbelievable.
