VAQUEROS TEXAS BAR-B-Q

Absolutely lived up to all the hype. We loved the Birria Tacos which we ate there and took home some of the ribs which were equally fantastic. We will be back regularly for sure especially since there were dog friendly places to eat.

The food is literally to live for... That's it I extremely enjoy every bite of my tacos that had such a great flavor brisket topped with this homemade blend of onions and juices and everything else that they put in it. The taco shell was crispy and flavourful the cheese and every ingredient was literally savory.

This is one of the most complete food trucks I've ever experienced.From the bike racks to the QR codes so you can stay connected, and the service was impeccable and a controlled comedy show.

Mr. Chicken AKA Darrell, was Johnny-on-the-spot When he suggested I should pour Vaqueros blend of herbs on my 🌮 tacos which sent my tongue on a trip to paradise. Everyone behind the counter had a great personality, candor and the ultimate Texas hospitality. I thoroughly enjoyed myself and look forward to another visit in the near future.

There will be a slow-moving line. It is worth it!!! This BBQ is top tier. Get a beer, stand in line, it's not that bad.
Hop and Sting Brewery has great beer, a nice outdoor patio with plenty of seating as well as indoor. Just outside the patio area is the Vaqueros trailer where you queue up, debate what to order, and get a tray of delicious food. You MUST get the brisket at a minimum. It melts like butter in your mouth. Delicious food!!!

This BBQ restaurant is a hidden gem tucked away behind the Hop and Sting brewery. Absolutely delicious food that is a must if you are nearby. I’m sure most BBQ is great in Texas, but this little place is certainly a standout. You won’t be disappointed. We were at the brewery and kept seeing plates of delicious looking food. All of the patrons were serious fans and convinced us that we had to try some. There was a lot to choose from but I had to sample the Prime Brisket. It was the best I’ve had to date! Mouth watering and satisfying. My wife has a beef allergy(ironically bestowed upon her from the bite of a Lone Star Tick), so she had the Mom’s Turkey sandwich with the Apple Gorgonzola slaw. Everything was phenomenal! Im definitely a fan now too!

One little side note. When you order the sandwiches you need to request BBQ sauce, pickled red onions, pickles or jalapeños if you want any of them. You can also get them on the side. 😋

Was so hungry looking for post workout food. Couldn’t believe I ate it all. The tacos 🌮 were so good. Spicy Cucumber Salad was surprisingly good as well.

I got to tell you I've never had a BBQ sandwich with brisket and turkey on it at the same time but this was awesome!
Plus the sausage was phenomenal too!👍👍

Can’t believe I haven’t left a review here yet! One of the first places I tried when I moved here almost 2 years ago, and continues to be a favorite of mine! Trey is awesome (the pitmaster) and he’s always cooking up something fun and interesting. Go for the bbq fri-sun and go for the taco night thurs! The tamale sausage is phenomenal. If he’s got pastrami brisket, get it!! Everything is good here! And it’s a great spot adjacent to hop sting brewery. Grab some bbq and grab a beer if you want!

The service at Vaqueros deserves five stars. A response within 24 hours specifically to what I typed is legit.

Otherwise, the BBQ I had today was decent. The price is very affordable but none of the flavors really hit home. I'll have to come back in the future and try Vaqueros again. But the Molino pop up on Tuesdays here is super delicious, I recommend stopping by.

Vaquero's is led by Chef Trey Sanchez, an incredible talent and even more amazing person. We have had the pleasure of getting to know him and his team through their delicious food and conversations. The soul of what I would call Mexican-inspired Texas BBQ shines through every dish they present. Everything served is made with humbleness, hard work, and a never-ending dedication to bringing out the innate greatness of the food itself.

Every item on the menu deserves to be tried, as there is greatness in each one. That being said, some of my personal favorites include:

1. Birria Tacos: Made with smoked brisket, these tacos, with an amazing consummé, have just the right amount of crunch on the outside, white cheesy goodness on the inside, and an overall deliciousness that just can't be beat. As a native Texan, I can say that Vaquero's Birria Tacos are my absolute favorite way to enjoy brisket. I know, I know...that's a lot of big talk, but I am willing to bet that if you try them, you won't disagree.

2. Smoked Turkey Breast: Impossibly juicy, Chef Sanchez's smoked turkey is a melt-in-your-mouth explosion of intense flavors and just the right amount of smokiness. If Chef Sanchez happens to have this on the menu that day, I never leave without some.

3. Apple Gorgonzola Coleslaw: Okay, I know this is "just a side," but this mix of cabbage, cranberries, pecans, and salty gorgonzola, along with a sweet berry sauce that has small, delightfully tart, green apple slices. I eat it as a stand-alone and add it as a topping to both the pulled pork and the pork belly.

If you aren't hankerin' for Vaquero's at this point, then I've done a dismally poor job of a review, and would strongly encourage you to take a trip and try it for yourselves!

Stopped here after getting into town. Close to the airport and the perfect atmosphere for my husband and I. Food is incredible and absolutely worth trying. Chef is apparently a James Beard Finalist and that should tell you everything you need to know. Definitely try the tacos!

Vaqueros BBQ catered the rehearsal dinner at Hop and Sting Brewery for my daughter's wedding on 11/10/23, and it exceeded our expectations. Trey, Jonah and the team did an amazing job with the food and service. They served brisket, turkey and birria tacos, and all 3 were perfect. Highly recommend for catering as well as great BBQ at Hop and Sting!

I think my husband order the fiesta tray since it is huge for at least 4 people to eat. I like the hot link and it is very spicy. The meat is great. The only thing im not a fan of is the tacos. Im more like street tacos and my husband said those tacos are a bit of greasy but still good. We love their food every time we come out to Hop & Sting Brewing. Be aware that the line is super long to order food.

Drove three and a half hours to try this food and it did not disappoint. The Birria Tacos are all they are hyped up to be and the rest of the food was worth the effort to get there.
Finding a Drink was a little tough if your a non drinker so I would suggest bringing your own, if your a beer drinker the brewery is fully prepared for you.
I tried all the meats and sausages on the menu. The turkey was my favorite of meats, the chipotle cheddar was my favorite of the sausages. The pulled pork and ribs were exceptional as well. If I had to choose one favorite from the visit I would have to say the Birria Tacos. A squeeze of lime, a quick dip in the consume’, and wow what a great taco.
I also tried the sides available that day. The cucumber salad was the wow factor for me. The Cowboys Potatoes was a close second and my wife loves the Apple Gorgonzola slaw.
Lastly, the owner and staff were great hosts. They really take care of you and they greet you with a huge smile, kindness and gratitude. The owner personally thanked us and was genuine in his conversation to get to know us. Their bright and happy attitude is something you see less of these days, especially while working in the 110 degree heat.
All in all, you won’t be disappointed with any part of your visit here, try it!

This was by far THE best birria tacos I’ve ever had! I also got the pit master sandwich. The service was pretty quick and they were all friendly. The meat was so tender and flavorful, I literally have no complaints! I will definitely be back!

Always looking for someone's take on Birria Tacos and these did not disappoint. Well executed with a foodie friendly presentation. The consume was a little runny on my order and wished it was a bit denser, so the tacos grabbed some of it better. I've seen other reviews where it's denser. However, it does not distract me enough from returning.

I was also offered a sample of their brisket, which I thought was very moist, juicy and smokey with the characteristic you come to expect when you have good brisket.

Looking forward to visiting this cool spot and recommend to anyone who hasn't had any Birria Tacos before.

Definitely lives up to the hype. Every item we had tasted soo good! Wish I had more consomé with the birria tacos. We ordered tour of Tex Mex.. and that's definitely enough food for 3 people. It was also nice that we can go in to the brewery with the food and just hang out there. Definitely coming back soon!

Grabbed some lunch here the other day. They have a good selection of meats available in per pound amounts. I tried the Brisket nachos and they were excellent. The patio area was a great eating spot with outdoor propane heaters and picnic tables. It was easy to grab a pint at the Hop & Sting Brewery since they have the walk up window right there. Need to come back and try some more of the options.

AMAZING BarbBQ!!!! We had the The tour of Tex Mex which came with delicous brisket, chipotle cheddar sausage, beans and potato salad plus 3 delicious birria tacos!!! The bbq sauce was so good... loved everything. We got to give our compliments to the owner and chef, and he was so nice! We will definitely be back!!!

We also had some tasty beers at Hop &Sting Brewing Co. where the Vaquero's food truck is located!!!

Vaqueros Texas Bar-B-Q is an absolute gem. My fiancee and I had Trey and his crew cater our engagement party. The results were amazing. He served up his moist brisket along with his smoked pork belly and turkey. The meats were fantastic and the sides were just as good. Jalapeno mac and cheese with cucumber slaw worked with the entrees perfectly and our guests absolutely loved it.

The excellent customer service and hospitality by Trey and his crew are second to none. I'll be sure to book him for my next catering event in the future. Make sure to give him a try at one of his future pop-ups or events! You won't be disappointed!
