Nikki did an amazing job with our frilly retro 70s wedding cake. It looked incredible and tasted as good as it looked, she matched the reference photos perfectly. Our guests loved the vanilla lavender flavor, it was just subtle enough that it wasn't obviously floral and everyone was asking about it. Their coordination with our venue also made everything so easy, it felt like the cake just appeared. Thank you so much!!

I'm very happy I chose Thistle and Honey baking for my wedding! I have a huge sweet tooth, so the dessert table was one of my big priorities. The apple orchard cake was a huge hit! And it was decorated beautifully with fall leaves. Nikki also helped us choose options for our guests with allergies. We chose salted caramel tarts (a favorite of mine) and GF/DF mini apple pies to fill out the table. Absolutely scrumptious!

Thistle and Honey Baking's treats are absolutely out of this world!!!! Nikki is a master of cookies, pastries, pies, and any dessert you can imagine! I am not a cake person, but I LOVE her cakes. Her strawberry short-cupcake is so fresh, and her blueberry lemon cake is light and tangy. Highly recommend any of her bars and her maple whoopie pies. If you have an upcoming special event or are just looking to send a pick me up to a friend, Nikki is your girl. She's catered multiple art opening receptions at my gallery (including delivery and set up of the treats, all on short notice with special requests!) and I'm hoping she can make our wedding cake if she can squeeze us into her schedule. *fingers crossed* Thank you for all you do, Nikki!! Also, she can sometimes be found at the Midd Summer Markets if you ever want to grab a goodie from her on the go!

Nikki was incredible and a pleasure to work with. She allowed us to be creative and took the time to understand the types of flavors and decor that we were going for. Since we were out of state and wanted a wedding cake for our elopement, she made time to speak with me over the phone, we arranged for a tasting box to be shipped to our home state, which arrived quickly, and after a few follow up questions, she had all the information that she needed to create a masterpiece. Upon delivery, the cake was everything that my husband and i could have asked for and as for flavor well, she nailed it!!!!

Nikki is such a pleasure to work with! We used Thistle and Honey Baking last year for our wedding and it was one of the best decisions we made. We ordered cupcakes for our guests and a small cake for us to enjoy. All of the flavors were amazing and the cakes were dense and delicious. Nikki was also great to work with and we are I’ll continue to order from her in the future.

To be honest I didn’t know finding a baker was going to be my hardest task for my wedding. As you see I have a very severe allergy to tree, nuts, and anything with coconut. So a lot of companies felt that I would be a liability with baking a cake for until I found Nikki. But you know what they say. You gotta go through a lot of nose to find the perfect one who will say yes Nikki helped me every set of the way.
She was fantastic, as we were having a destination wedding, so she emailed me everything that I needed, and make sure my wedding cake was perfect for my wedding day. She even expedited and mailed us our sample cake tastings, which she made into mini cupcakes. We fell in love with her pumpkin cake with ginger cookie crumble & cinnamon, buttercream, frosting. It was funny. Actually, my husband was obsessed with the pumpkin cake, and I knew no one was going to believe that I didn’t pick it out that he was the actual one that picked it out, so once we cut the cake and passed out to everyone, everyone loved our wedding cake. Our family and friends loved our wedding cake so much people had second pieces and third pieces, we didn’t even have enough to “save for our first year anniversary”. I’ve never had so many compliments just on our wedding cake itself. The wedding cake itself was so creamy, smooth, and moist. I personally normally I’m not a sweet person I don’t even eat cake and 90% of the time but oh my gosh do I wish that we had gotten like a four or five tier cake that way we could just have extra to have eaten that night of the wedding after everyone left, and to have some for first year anniversary. I cannot stress enough how fabulous Nikki was, and is me and my husband have now been married for six months, and I promise you guys at least once or twice a month. He talks about our wedding cake and brings it up about how much he he wishes we had more, so I’ve contacted Nikki and she even express mailed me some pumpkin cupcakes for six months anniversary and it’s a total surprise, I’m so excited for him to see what Nikki has made for us.

I made an online order for a couple pies a while back. It was last minute and didn't know if they would be able to make the pies in time for my event. I submitted the order hoping she could accommodate my request. Amazingly, Nikki quickly wrote to me saying she could expedite the order, and in just a couple of days I was able to pick up the pies just when I needed them. Nikki was a delight to work with and the pies were SO delicious. I highly recommend this amazing woman-owned-and-operated business!

Thistle and Honey Baking makes amazing desserts and cakes! On the spot she made a strawberry shortcake for my fiancé and he almost ate the whole thing. She is so creative with what she makes and everything tastes delicious! I will definitely continue to order from her!

I have had the pleasure of ordering goodies from Thistle and Honey as well as purchasing her baked at markets, and cannot say enough great things! Every single thing I have had the opportunity to enjoy — from cookies and croissants to the pie (hands down one of the best we’ve ever had) and amazing rosemary bread we ordered for thanksgiving — has been next-level delicious. If you’re looking for a gorgeous and delicious cake for your wedding cake, look no further than Thistle and Honey Baking. Leading up to our wedding in February, finding a baker that would be willing to bake a tasty cake for our big day was difficult to find. It seems like all of the bakers in Lake Placid go south for the winter or are not able to accommodate a cake tasting or won’t make a cake for smaller groups. I got in touch with Thistle and Honey over The Knot and it was an easy process to get everything started. My fiancé and I are active duty military and we weren’t able to make it out for a cake tasting due to tight schedules. Thistle and Honey mailed us the cake slices to our home to try. They arrived fresh and were amazing! It was a difficult choice between all of her cake flavors – they all melt in your mouth. We ended up going with the Vermont Maple cake. She made us a two-tiered cake which was perfectly sized for our 12 person wedding party. Thistle and Honey made the entire process easy and stress-free. It’s almost like the cake just appeared in our dinner area when it was time to eat. The cake itself was gorgeous and it was a fan favorite. We cannot thank Thistle and Honey enough for the wonderful cake and stress-free process for our wedding day.

I recently catered a wedding that Thistle and Honey baked the cake for. It was simple but elegant and beautiful! I got to taste a TINY bite and from what I tasted, it was delicious! A great spiced cake with a sweet frosting that paired nicely with the cake. Good job!

Nikki has been my go-to for our cake needs and has never once disappointed. I always order a bigger cake than needed so we can keep the leftover cake for ourselves. Her professionalism and incredible baked things are truly top-tier!

I ordered my wedding cake and cupcakes from Thistle and Honey and I couldn’t have been happier!! The flavors were great and they looked gorgeous. 12/10 would use them again and again!! Can’t wait to have an excuse to order cupcakes again in the future to relive the day ;)

I ordered a birthday cake for a friend from Thistle and Honey and it was absolutely AMAZING! The colorful sprinkles highlighted the beautifully applied frosting. The cake was a huge hit and the birthday girl LOVED it! 10/10 recommend!

I cannot recommend Nikki enough, seriously!! First, every single dessert that she makes is soooooooo delicious. I am not a lemon dessert person, but I could not stop eating her lemon cupcakes and whoopie pies. Second, she is an AMAZING communicator and so personable! She is timely and answers every question/concern that you may have. Third, her decorating and presentation skills are incredible!! I sent her a long list of designs that I love in wedding cakes, and she managed to touch upon almost all of them to create the most beautiful (and incredibly delicious) wedding cake. Fourth, she's super flexible and willing to work with you to provide the wedding cakes/desserts of your dreams. She has a dessert bar option and with the sweet tooth I have, I wanted a little bit of everything and she made that come to life!! For our wedding Nikki (single handedly by the way - this woman is a rock star) made a two-tier german chocolate cake, a chocolate whiskey whip grooms pie, and a dessert bar filled with mini cupcakes (raspberry-lemon, peanut butter chocolate, and maple cream), whoopie pies (chocolate, lemon, and maple), apple cider doughnuts (old fashioned and sugared), fruit tartlets, raspberry shortbread bars, and rocky road brownies for ~100 guests. Nikki provided the plating and signage, which she made sure fit into our overall wedding aesthetic. If you have a sweet tooth like me, then you need to hire Nikki. She is really the dream and will make your day absolutely perfect!!

Such a great bakery! The baker went out of her way to make a special order cake for my college son’s birthday, and her weekly ‘treat boxes’ are so yummy and clever! Same college son always looks forward to getting them.

Nikki’s baking is superb and her customer service is even better!! She is friendly, helpful, and responds to inquiries quickly.

I love every time Thistle and Honey is at a Farmer’s market. I look every time I go. All the goodies are delicious, beautiful and such fun flavors. Definitely ordering in the future.
