Don’t walk here. Run! Best food in this town. If you enjoy craft cocktails, superior service, and an elevated menu this is the place in the Highlands. After many dining experiences, this is the place we felt the most excited about.

If you’re looking for great food and drink, great friendly service, and a relaxing vibe, give The Stubborn Bull a try. We’ve been coming consistently since they opened as Stubborn Seeds last July. The owners Kiki and Clarissa are awesome and tonight our server Leica, like all of our previous servers, provided prompt, friendly service.

Highlands has many great restaurants, make sure you come enjoy Stubborn Bull. If you’re like us, you won’t be disappointed!

Amazing food at a wonderful venue. We’ve been twice and the food has been excellent — carefully prepared and beautifully presented. This time we sat on the side-deck next to Mill Creek; an almost surreal experience being able to relax and enjoy the water. Unhurried service by a staff that clearly likes working at the restaurant and helping guests navigate the Tapas menu. Both visits five to six small plates total were enough for four people.

We were taken aback by the amazing attention to detail in every inch of this place! The location along a soothing creek, modern layout, cozy seating, incredible art, even wine bottle water glasses! Absolutely stunning! The staff were all smiles, welcoming, and professional in every way! We enjoyed the wild mushroom soup, sea bass, ribeye, and chicken curry. Everything was delicious, fresh, flavorful, and prepared with such care and attention to detail! We are still reeling over what an amazing experience we had.

I cannot possibly recommend this place more! I sat at the bar where Manny & Cody greeted me. Both were fantastic. The truffle porcini mushroom ravioli is to die forrrrr. The garlic shrimp (actually called something else) very fresh and plump. Wine selection is excellent. Espresso martini made with actual espresso. If i lived closer, I’d be a regular.

Staff was knowledgeable of the whiskey. The environment was on a good chill level. I couldn't help but tip the chef for making some of the best Elk Rack I have had.
The Beet salad is the best yet since I discovered it back in 2015.

Great new restaurant in Highlands. Everyone has been talking about this place and we have twice. Both times we ordered something very unique and we were not disappointed. The chef is phenomenal here and the dishes have so much flavor. Tad was a great server who kept me laughing and took great care of us.

Loved this place! Our service was fantastic and our food was delicious. All the dishes we ordered were prepared perfectly. Our server, (his name I can't remember), was delightful. Looking forward to going back.

An absolute gem of a dining experience! The Stubborn Bull is a culinary haven where every visit feels like a celebration.

From the moment you walk in, you're welcomed with open arms by the friendly staff who treat you like part of the family.

The ambiance is reminiscent of a lively night out in South Beach, setting the stage for an evening of culinary delights.

The tapas selection is simply sensational. Each dish is a masterpiece of flavor, from the perfectly spiced Indian butter chicken tapa to the mouthwatering elk and tenderloin empanada. Speaking of the empanada, the surprise addition of green olives and raisins took me right back to the vibrant flavors of Cuban cuisine in Miami—a delightful fusion of cultures on one plate!

And let's not forget about the Churasco Cuban skirt steak, a dish so succulent and flavorful that I couldn't resist stealing bites from my husband's plate all night long.

And the Peruvian Choufa? A symphony of tastes and textures that left me craving more with every bite.

Overall, dining at The Stubborn Bull was a divine experience that exceeded all expectations. The food, the service, the atmosphere—all top-notch. Tad was absolutely the best server I have ever had. He is remarkable, knowledgeable, professional, and down right just a great person along with the incredible food! Will come back for the atmosphere and delicious food!

STUBBORN SEEDS IN HIGHLANDS NC is an excellent restaurant. We had a shared dish with lobster tails, scallops, shrimp and a very tasty tomatoe sauce rice bed with peas. Outstanding seasoning. Great chef. Pleasant wait staff.

My husband and I were recommended to check them out by a local business owner. We loved the atmosphere, we dined on the deck. It was chilly out but the outdoor heater and complimentary blankets made the experience comfortable. Our food was great and our server Lecia was next level amazing!

This establishment is absolutely outstanding! I must express my utmost admiration for the impeccable service delivered by the extraordinary waitress, Leica, which can be compared to a prestigious 4-star Michelin rating! The food was at a 3 Michelin star. The steak schnitzel was incredible. Oh and the Tiramisu to die for.

Many visits , many good times ……….We love the later hours and certainly have been pleased with the food . Bar staff is always fun and it’s just a great place to be a regular without breaking the bank . Tapas are generous when compared to big city places and if you want an entree they can accommodate that too .

We ate at Stubborn Seeds a few months ago with our friends. We all thought the food was very good with great selections. The drinks were also tasty planning on going back next week and taking 3 couple that have never eaten here.

We ordered about nine dishes to get a pretty clear idea of the quality of the food served. And it was absolutely amazing. Refined, flavorful, and perfectly prepared. Moreover, the staff was utterly professional. Our new favorite restaurant in Highlands!

My wife and I found this lovely town on a deture trip and from a referral from a local shop we stopped here for a great meal. My wife's first selection was not as pleasing as hoped. The staff handles the experience professionally. We know thing don't always work perfectly. Handling a situation and keeping it a great experience is refreshing. Thank you Leicia for making our night.
