Nothing is better than 1 cup of good coffee to start your day!

With such an exceptional location they are simply the good mates to all people in the neighborhood.

If you are lucky enough you can watch then bake the coffee beans live.

It’s one of the best cafe and roasters in Brisbane. They sell very unique and scarce coffee beans. They also make good coffee cups.

Today, we walked by the café, and the friendly young lady working there greeted us with a smile and helped us choose our coffee. We hadn't planned on having coffee with my partner, but the service, attention, and guidance we received were exceptional. We truly felt great with so much kindness. A wonderful experience!

Great coffee - they really know their beans here. A bit disappointed that only pastries were available as I wanted a cooked breakfast but I stayed anyway, the pastries are fresh and delicious and the staff are super friendly and attentive.

That was a lovely morning with sunlight shining through the canopy of leaves. I saw a welcoming smile of the girl from inside the shop, then stopped by and bought a cup of coffee for the new day.
What's so seductive about a cup of "dark water"? I like the harmony of coffee here. I like the alertness from coffee to think clearly.

The Maillard Project never ever disappoints. You’re guaranteed a perfectly prepared meal ALWAYS. The freshest ingredients paired in fun, vibrant and creative ways that elevates traditional menus like scrambled eggs, French toasts etc. to cosmic levels. It’s the kind of meal that you are sure to mop dry with your last piece of brioche. The menu changes periodically and it’s always such a delight to know there’s another gastronomic delight to indulge in. Staff are so friendly, pleasant and welcoming. On top of that, service is always so fast. It’s priced really well considering the large portion sizes and quality of ingredients. I can’t recommend this place enough for 10/10 meals.

Serious coffee alert!!! The Maillard Project take coffee very seriously. Roasted on-site, selections of house blend, as well as single origin Ethiopian and Brazilian beans selection today. They change the beans menu twice a week and every bean selection is accompanied with the story of altitude it was grown at/ which part of the country it came from/ how long the berry fruit was soaked for and the farm that produced the beans. The space is beautifully decorated with plenty of sitting area and the coffee bar in the middle. The service was very quick and friendly with a smile and great knowledge of their beans.

Serious coffee place for serious coffee lovers.

Such a great menu! Quite unique with the Asian fusion - loved it! Food was delicious and coffee was good too. They have a range of coffees to choose from and amazing cookies! Must try the cookies!

Possibly the best coffee in Brisbane. I really like their house blend - the fruity notes are prominent.

I've been here a few times. I've never been disappointed with their coffee. Their menu items are innovative and well presented. My favourite has to be the breakfast congee. That was a game changer.

Friendly staff who are eager to please.

AMAZING. Not even joking, hands down this is the best crossaint I’ve ever tried in my whole life 😍😍 I got the German sausage flavour and the outside was so flaky and even the inside wasn’t too oil or soggy. I tried lune before this place, and this place beats lune 100%

Coffee was nice too and atmosphere and vibe of the place is great. Will come back again

Amazing food and incredibly fast service. My partner and I love this place for their all day breakfast options, lovely service and efficiency. Extremely better than your average Cafe and they offer a large variety of coffee options. We will be returning customers.

This is such a perfect place for breakfast and lunch! The coffee is right, the food is right, the service is right, and the environment is right!

The coffee is right because the beans are nice with a good variety. This has to be one of the best coffee in the CBD.

The food is right because it is delicious! The crab linguini was heavenly!

The service is right because the staff is enthusiastic and energetic (you almost feel it’s a bit too much energy from them when it comes to passion about their food and coffee)!

The environment is right because it’s spacious and the seats and tables are comfortable.

Easily one of the best cafes in Brisbane!

The clear winner of today.
I just lasse by and saw an Loring S7 in the window and just had to stop.
Nice coffee really, had an extended fermented Costa Rican V60 and it was a very balance coffee, light, easy to drink but not boring and with a punch of sweetness towards the end.
Great place with people that clearly know what they are doing and enjoy coffee.

This stylish café in the CBD of Brisbane looks like a specialty coffee laboratory. Next to the three espresso machines, you will also find a commercial coffee roaster and an Ikawa Sample roaster. Furthermore you can admire their green bean storage behind a transparent glass wall.

The architecture and the interior design are minimalistic and sleek. The benches for the machines are made of solid looking stones that match the exposed concrete walls. The ceiling was full of exposed pipes and the light was bright to compete the industrial 🏭 look.

The coffee menu is long and exquisite and the food menu looks more than delicious. For today’s lunch I went for eggs benedict 🥚 with prawns 🍤 and an Ethiopian 🇪🇹 filter coffee ☕.

It was nice to meet the friendly barista again, who came to visit us in the VA Experience Lab in Melbourne. She brewed my coffee with great care and passion for details and a great smile on her face. I always enjoy being able to smell the coffee grounds before tasting the coffee itself from the cup. It enhances the sensory experience. From smelling the ground coffee, I immediately knew that I will 🔜 enjoy a super tasty coffee.

Negussie Gemeda Mude produced this delicate coffee at 2,200m in the Sidamo region. It is a natural and the variety is called “74158” which obviously hasn’t got a lot of food appeal. Yet, in the cup the coffee was very clean, high in sweetness and with a bright winey acidity. I liked the beautiful apricot and peach 🍑 flavors. The mouthfeel was coated and silk and the finish was long and lingering.

The coffee matched very well the eggs benedict - both were delicate in flavors, light and refreshing.

In my mind, there are four essential features to a good coffee shop, and this place ticks them all off.

Range of Coffees and Taste:
Maillard have a large selection of roasts and drip based coffees, which have all tasted amazing so far. I'm confident there is something for the palate of every coffee lover here. The staff are obviously well trained barristas and the machines well kept. I have not yet tasted any hint of over-roasted bean bitterness, nor ill taste of the sort you'd find in a McCafe pushing out dozens of coffees in short order.

Food:
I cannot fault the food here either. Taste and presentation are both excellent. I would highly recommend the Wagyu Burger. Prices are those expected of a Cafe setting, $17-$25 off the top of my head for a main. Perhaps the only negative is that food does sometimes take a while to arrive, which personally is not a problem for me.

Atmosphere:
Boasting a clean and modern decor, it is a nice place to sit down and have a chat without noise being an issue.

Service:
The staff have all been very friendly and helpful, and knowledgeable with the myriad of coffee products. So if you are a bit overwhelmed with choice the first time you come (as I was), they can help with recommendations.

I know this cafe guided by its sibling (one of my favourite) - Coffee Anthology.
Definitely never be disappointed. Really love this Asian style Benedict - Okonomiyaki Benedict with cured salmon. The coffee was as great as always. The only point might that I was too full to finish all😅

Not enough adjectives to speak to the wow of this place. They roast beans on site, warm service and brilliant coffee. I haven't even started talking about the food. The food is wow. Definitely a different experience from your standard Bacon and eggs café, not that there's anything wrong with that. But the artistry and the excellence was on full display on my visit. Highly recommend.

I love the coffee here. Their pastry selection is good if you get there early, arrive to late and it's all gone. Do yourself a favour and try a bean from somewhere exotic, open your tastebuds to something new and exciting.
