Excellent coffee, friendly welcoming staff, nice relaxing and open environment. Love that you can order different roasts.

We ordered an iced mocha with cinnamon and two cortados with different roasts. The two roasts were very distinct and both were delicious.

World Tour is a darker roast has a robust and rich flavor.
Pompadour is a lighter roast with a smooth milder flavor but none of the fruity notes that usually turn me off from lighter roasts.

Spacious cafe with high ceilings and a relaxing ambiance. Great for working on your laptop, reading a book alone or socializing with some friends. Staff are very kind. Didn’t get a chance to try any of the pastries but would definitely love to come back. The chai was amazing!

Excellent coffee, great space to chill or chat or do a little work. Definitely my favorite coffee shop and roaster in Ashland, highly recommend dropping in and staying for a while.

I found this sweet cozy coffeehouse just in the nick of time as it started snowing as I was taking in the adorable little boutiques in Ashland. I asked the barista’s to make me something special as it was my 1st time visiting their coffee shop and feeling like getting warm & cozy. I was greeted with a warm welcome and yummy coffee and pastries.

Walking in the place seemed inviting and spacious. The staff was friendly and informative. They make their own pastries except for the croissants. Great place to bring your laptop to study or work.

Best iced oat milk latte in town.
If you like your coffee really burnt tasting, kind of like a mix of a rubber fire and tobacco, you may have a hard time here.
I suggest the World Tour if you like dark roasts.
They are trained coffee experts and are always happy to give recommendations, reminds me of going to sushi in Japan. The sushi chef tells you what to order and how to eat it. I was always happy I listened.
If you are more of an all-you-can-eat sushi buffet person, this place is not for you.
They often sell day old bakery items in mystery boxes at a nice discount.

I always stop at Noble Coffee when I'm passing through Ashland. If I lived in Ashland, I'd be at Noble every day. Coming from a picky coffee connoisseur, I would say they make the best coconut milk latte I've ever had. They have a good stream of people coming, going, and staying, but there's always a place to sit. It's a good place to work remotely, too. Sometimes, a line forms at their peak hours, but they are speedy with their service. I highly recommend 👌.

I’m a cappuccino kinda guy. So, when traveling to new towns, especially in the PNW where the crunchy culture takes its coffee tradecraft peacefully serious, I will often make my first go-sees to the highest starred shops.

Assuming a generally fair-priced playing field amongst boutique coffee shops, often my first appraisal will be the price fetched for a cappy. At $5.50, Noble’s price suggested they were hella proud of that offering.

I tend to like spending my time waiting for my coffee drink, being a good student of my Barista’s technique and observing the bravura they bring to the pulling process. I was tickled by what I saw. Such facility, such fluidity. On a brief inventory of the love baked into this cup, my outlook was high-order.

At first sip, the creamy, nutty notes, which fired on all cylinders, went straight to my bean brain. The way only such caramelized nectar, rendered under high pressure extraction can. And by baristas who are not only proud masters of their craft, but a credit to their profession.

The body, bouquet, and tongue bath of this cappuccino was not only an achievement but a real arrival point for me….as I realized that this might very well be the best cup outside of Italy, that I’ve ever in my life had.

Lingering in my head long after the last drop, I became paralyzed when it came time to re-enter the expressway and I turned to my wife and said, “I dunno when I’m gonna be back Ashland and if I get hit by a bus tomorrow, I’ll go to afterlife in a bad mood for not savoring that experience one more time.”

So I did it. I turned that car about-face for another round of bliss. Oh, and to bookend this glowing review, lemme say that while I may first have winced at the cost as being somewhat spendy for a cappuccino, I now know that nirvana can be had for the bargain price of $5.50. One that I look eagerly forward to again tendering….if I can stay outta the way of that bus.😂

The rumors are true; Noble Coffee is Fantastic! They’ve got a wide variety of coffee, espresso, and tea options and the area is very large if you want to meet friends of business contacts. Don’t miss they’re handcrafted tonic that they produce in-house.

Great coffee shop with spacious seating indoors and pleasant outdoor seating. Good array of various brewing devices on sale and a nice selection of house roasted beans. The place knows how to make a very tasty dirty chai (imo). Looking forward to having a dry cappuccino done correctly, I'm sure the baristas here can easily manage. One my my gf's favorite coffee places to visit (from the bay area and Portland).

I moved to Ashland a few months ago and while I enjoy all the cafés, Noble is my fave. It’s a beautiful space, the baristas are awesome and they make me a perfect half-caf cappuccino. A daily perk!

Great spot to hit when you need some fantastic coffee and food to wake you up. The inside was lit well and had plenty of seating. They had a great choice of coffee that is house roasted and brewed. I was really pleased with my granita, especially that it was made with oat milk. Extra delicious. Also there are gluten free food options.

First, customer service was amazing. Super friendly staff that was really helpful since I'm not a "fancy" coffee drinker and had some questions about the menu. I ordered the masala chai with a blackberry scone, and my boyfriend had a black coffee with a chocolate croissant. Everything was absolutely delicious! Was it expensive? Yes. But I'd rather pay the extra $1-$2 for a really high quality drink and pastry than something subpar. I loved the ambiance and vibes! It was cozy and modern. Would definitely come back!

I love how they explain the espresso choices but never in a condescending way. My favorite is a cappuccino with their more floral espresso, but I've never had a bad drink here.

Wow! This coffee is amazing and just what I needed, I was so tired today running around doing paper work and bids. Drank this and it put me back into the mind state I needed for today. Nathan helped me figure out what type of drink I wanted and was so helpful. Best place around, with professional staff! Definitely telling everyone about this place and coming back.

I really like this place. I’m not ready to sit inside but the sidewalk tables are doable. The important piece is that I really enjoy their drinks. Today I had a chai with an espresso shot. It was perfect for a chilly 36 degree morning. Fall is here!

Lovely, laid back setting. Great environment for relaxation, might be a bit challenging to focus if there are loud/boisterous conversations going, so bring earbuds or headphones in that case. Lots of table and chairs, wall-lined bar stools and a couple lounging spots. 10/10 would coffee there again.
