Honestly think this might be my favourite restaurant in mexico. The only restaurant I’ve been to that came close was Rosetta’s in Mexico City but this was even more interesting. Totally original dishes with love. Every single plate is chosen for the food on it and every mouthful feels like someone spent months considering it. For me the dishes that stand out were the molote of duck that I ordered two of as it was so good, the yellow mole, and the trout which is made from all local ingredients and literally feels like you are lying in a forest with a mountain stream running over your face. Oh and the cauliflower started off feeling like my mum’s go to kid’s dish but then exploded with spicy flavour when the black mole cut through. Honestly - got to try it all - and the service feels like every person loves every dish as much as you will. Oh and the beer I was suggested went incredibly well with everything - a massive surprise in itself. Please just come here and try everything!!!

We had a magical night at Maizal. We ordered (in advance) the menú de gustación con vino. They prepared a five course meal with wine and I loved everything. If they put me under a spell that's okay by me. Service was fantastic. The wine pairing was excellent. The atmosphere is grand.

Setting: 4.2 basic setting with minimalist style. The plates were always matching the food and really elegant. Good style!
Service: 3.8 very kind service, but lacking of some common restaurant rules.
Food: 4.8 starter and main were really good, but in my humble opinion missing the crunchy part to balance the creamy part and the bread came only with the main. The dessert was simply perfect and delicious.
Drinks: 4.5 I had a nice Monastrell from Spain though I would have appreciated a local wine by glass.
Total experince: 4.6

Fractal is the real deal! Handcrafted, unique, beautiful, and delicious cocktails with a strong emphasis on Mexican liquors and flavors for a true local experience. While there is outdoor seating, sit at the small bar and chat with the expert staff for a delightfully educational experience touring their carefully curated distilled Mexican treasures. Highly recommend for any cocktail geek or for anyone needing a taste of sophistication in their lives.

This is the best cocktail bar I have been to in Mexico. The drinks feature Mexican alcohols giving a unique twist to classic cocktails, or unique compositions based on local Mexican dishes or experiences. Each drink tells a story that is unique to this region. If you are looking for a good cocktail in Puebla, I cannot recommend this bar strongly enough.

Excellent haute-cuisine dining! We both had a 3 course a la carte menu and all dishes were amazing. The cauliflower with mole and the Costilla Abodaba are recommended :)

I never give such good reviews. First, servers are extremely kind and helpful. The concept of the restaurant was very interesting, only food sourced from the area. The course presentation was lovely and the taste spectacular. I especially recommend the trout and the cauliflower. The cauliflower is seasoned with two kinds of mole!

I will be back for sure.

Visceral, ambitious & delicious. One of my favorites in all of Mexico. Deep-rooted Pueblan cuisine refined, but with nothing lost. Truly incredible!!

Every dish was wonderful, the cauliflower is a must (licking the plate), the duck confit with grasshopper sauce delicious, the pork with apple butter and the trout such bold flavours. The chocolate dessert was also a winner! This place is inventive and food focused for those who like to indulge in "out of the box" flavours and style. Service is a bit inconsistent did not flow as well as it should have. The sommelier was wonderful. The Pais wine from Chile was perfect in every way. Don't miss this dining experience.

Great restaurant in the heart of historic downtown Puebla.
Everything from chef Daniel Nates menu is delicious; a combination of traditional Puebla cuisine with an artful and provocative twist that brings to your pallet a revolution of new flavors and tastes.
The staff, Juan, Edgar, and somelier Antonio make the experience even better.
Make sure to stop by and have a tostada de aguachile.

I had an amazing experience at the restaurant. The staff was super friendly, the chef explained every dish before serving it and they have an amazing collection of wine. I travel a lot and eat at a lot of fancy restaurants but this was definitly among the best dinners I ever had. Given the high level of food and service prices are also super reasonable. Totally recommendable!

I was invited to visit this restaurant by a friend. I enjoyed the experience. The food was inspiring and delicious! The concept is based on using local ingredients. We all had a tasting menu which consisted of 14 different dishes (small servings). The wait staff was atentive and well mannered. The restaurant is not very cozy. It is located in the central patio a a boutique hotel in the center of the city. The food is high design, the actual restaurant is not. I would like to return, though, to try other dishes on the menu

Simply the best value fine dining in Mexico. No gimmicks just creative and passionate cooking. Unique cocktails and an outstanding selection of beer and wine pair the experience perfectly.

Tuve el placer de probar el menú de degustación y todo estuvo increíble, desde el servicio, el tiempo de espera, y sobre todo, la comida. La bondad más grande es que la comida no sólo es una sorpresa de variedades y de sabores, es una comida que te acompaña en el resto del día, los sabores siguen sorprendiendo a lo largo del día y el detalle perdura en el recuerdo. El servicio fue muy atento, nos explicaron cada platillo cuando lo llevaron a la mesa, y estuvieron atentos a recoger todo en cuanto fuera posible para una excelente experiencia. Mi única queja es que es un lugar frío donde no hay mucha posibilidad de resguardo, en temporadas invernales vayan bien abrigados.
