Fabulous!

If you are a lover of unique experiences, this one is for you!

We’ve had the full menu with optional wine pairing.

Food and wine was locally sourced across various regions in Spain, which made it even more special and each dish had an introduction to it, same goes for wines 🍷 so we’ve learned something new while having this experience.

A really daring and adventurous menu, executed very well. The chefs clearly like to challenge conventional culinary boundaries and surprise diners with new flavors and ingredients. Definitely a restaurant foodie’s (and 95% of diners) will enjoy, but which might overwhelm some with more conventional tastes.

The blunt tomato, smoked sturgeon, beef lollipop and goat milk dessert came out as especially memorable and world-class (likely at 2* Michelin levels).

The lone glitch was a missing course - the boletus with rabbit glaze never arrived. When we inquired, we didn’t receive a sound explanation as to why, and another dish showed up as a replacement.

Service was efficient, attentive and thoughtful.

Space is large, with lots of space between tables. Spartan (almost bare, museum like decor - sans any actual art) was a bit of letdown and didn’t seem to complement the trailblazing cuisine.

Wine pairing was excellent and a great value.

We do a lot of Michelin meals and look for ones when we travel. This is a one star but there are two major reasons I would increase their Michelin to a 2 personally:
The food isn’t merely a chef’s creations . Thus 14 course meal was a culinary love letter to Spain. For those who want to taste flavors unique to the country from a chef that understands very well how to do it — this is the place.
Second: the wine pairing. It’s very difficult to get wine pairings done right. Each wine was good as a stand alone but brought a whole new unique flavor to the dishes when combined. It’s a pairing that doesn’t just go with the food, it complements it and adds to it. That has not been my experience in other Michelin 1’s.

I was very honored to taste what they are doing here and it deserves every bit of the attention it gets and then some.

All the dishes were amazing!
My favorites are jamon covered croquette, the prawns and desserts (pistachio was so good).
The little round ball served with the prawn was melting in my mouth. And the pudding was so creamy.
I think this is the best restaurant we have been to during this trip in Spain. Thank you so much for kindness and amazing food!

The food was delicious and just the right amount in terms of courses and portions (we took the 10 courses menu).

The service was impeccable with advise for the wine from the sommelier.

The decor is ok, which would be the only downside but I would go back next time I’m in Madrid! :)

Context: From London, studying at Cordon Bleu Culinary School in Madrid & have been to various Michelin recommended restaurants (inc. eleven Madison, royal hospital road, waterside inn).

View: one of best restaurants in the world. Had several dishes that would grade in my top 10. Squid. Red Prawn. Croquette (award winning). Excellent service. Creative dishes (amazing banana ice cream with caviar, works so well, salty, texture). Flawless presentation. Wine pairing was very good value and unique wines (inc. A wine stored in the ocean).

Simply amazing! the best experience you can get. We took the 14 dishes meal (the modern Spanish menu) and each and every dish was outstanding. Please note that although each dish is pretty small, it is very hard to get to the 14th dish :)

Excellent restaurant in Madrid, in a very nice setting at the Hotel Urban. Creative cuisine. All dishes were superb, the ham croquette was the best one I've ever had.

Amazing food and service, only a few tables in the very cool restaurant. The experience of the somos tasting menu is great, there was a huge amount of food but every dish well thought through and it got us talking about them, which for me is part of the experience of a tasting menu. A great selection of wine and sherries, the somelier was knowledgeable and friendly and always there to help. It's pricey but well worth it and it has a well deserved star! Highly recommend

What a great dinner. Starting from the welcome all was excellent to meticulous detail. The presentation, in the multitude of different plates / crockery, was a work of art on its own. One leaves the restaurant floating with the feeling of a great eve out. Well done!

With new chefs Javier Sanz and Juan Sahuquillo at the helm and a well educated, polished and inviting service team; CEBO was the best meal my wife and I enjoyed during our time in Madrid. Innovative pairings and precision execution of inventive interpretations of Spanish cuisine made our our 2.5 hour dining experience a fun and engaging dining experience. The molecular banana ice-cream w/ oscietra caviar was a standout, as well as the seasonal cheer peas from the north. Thank You for a great experience, we look forward to returning next time we are in town! *****

I made reservations for my husband and I at CEBO 6 weeks before my Valentine's Day trip to Madrid. Somehow I missed the need to confirm that reservation and when we arrived at the restaurant on a very busy night, we did not have a table. The CEBO team (led by the very lovely Primer Maitre) stepped in and suggested that we could still enjoy our dinner in the lounge, if we were ammenable. Their kindness and creativity to seat us in the lounge allowed us to have a romantic Valentine's Day with some of the most beautiful and delicious food and wine I've had in recent history. The service was thoughtful and attentive as well. I am so grateful to the team there. THANK YOU! Muchas Gracias.

Beautiful restaurant and fabulous service! The wait staff was extremely polite and responsive! They took time to explain the dishes, and ensured that we were experiencing a wonderful lunch. The food was absolutely stunning! We did the classic menu, and I highly recommend trying that your first time here. The chefs prepare the food at the front, and it's beautiful to watch. Honestly, this restaurant should be a must visit while in Madrid.

What an experience!

Everything from location to service and food was exceptional.

We ordered the classic menu and were surpriced with extra dishes the chef made for us throughout out our visit. It was all very tasty and well prepared.

Beautiful Wine pairing too with some interesting choices.

The price/quality relation is extraordinary and I will recommend this gem of a restaurant to anyone.

Visiting Spain this past summer, our group of two families wanted to share a Michelin star dining experience with our children. Cebo could not have been more accommodating! We had our own private dining area which was great for the kids and our server was wonderful, and patient. (sorry I forgot her name)
We ordered the full tasting menu with wine pairing and the basic tasting menu for the children. Wow wow wow is all I can say! It was an amazing culinary experience all the way around. The food was presented beautifully, tasted amazing and the service was top notch. The kids made Thank you cards for the chef and he even came out for a photo! It was all around an unforgettable experience! Thanks CebO!

Highly recommend if in Madrid and looking for the best 5 star dining option!

Class. On all levels.

Every city trip we look for a pearl with an intriguing menu. In Madrid we chose CEBO. The setting is accessible luxurious, sober but neatly finished and extremely spacious. We sat fairly privately at a large table, which added cachet. Each dish contained a surprising element, preparation method or texture. Not to mention the baby squid that you can cook yourself with delicious stock or perfectly cooked hake on the freshest first green peas. The paired wines are excellently chosen and are sufficiently explained. Unfortunately we found a little stray hair in the bean paste, but mulitple sincere apologies from the waiter and an extra (non-paying) dessert was the compensation. Definitely recommended! Btw, be ready to get English explanations at the pace of a Spaniard from the waiter, but overall the staff is warm, very attentive and friendly.

Food was absolutely delicious and the staff was incredible. I tried the classic menu since this was my first time here and I would definitely come back again. You get a nice tour of different food from different regions is Spain.

I enjoyed every single dish from the beginning to the end. My favorite was egg yolk with fish. Just as I wanted to have some rice, risotto came next. Very well constructed course. Pairing wines were wonderful. The servers are also great. Definately deserves Michelin star!
