Neder

Neder has become our restaurant to go in the center of Alkmaar. Since the moment we tried their fine-dining, we have been excited to come back and try all menu inspired by Dutch nature at a different seasons of the year. Neder has managed to surprise us all the time with their creative food/herbs preservation, harmonious drink pairings and fascinating dish preparation processes! The team is friendly and passionate about what they’re doing and you can definitely taste it.

Best restaurant in Alkmaar—by quite a long shot—and probably best in the area. Brian’s team at Neder has set a new bar for quality for the city and is bringing much, much needed culinary innovation to the region. We had a wonderful experience—with dishes that invoke both wonder and nostalgia—don’t skip out on the (non-alcoholic) beverage pairings, they make a range of delicious kombuchas, kvass, and sodas in-house.

I can highly recommend Neder: we had a dinner last Friday night and it had everything for a perfect night out. The quality of the food was great, the dishes were very creative and the staff was very friendly and helpful. I also like a lot that only local products are used and that we got to taste ingredients and dishes I would never try otherwise.

Superb fine dining. Every member of staff were knowledgeable and helpful. We enjoyed the chefs table and splurged on the wine pairing. Well worth the visit. The dishes that were placed in front of us were detailed, beautiful, locally sourced (all from Holland) and my husband and I had a lovely experience.

Highly recommend this restaurant to come for the experience. Everything about this place represented five star service, food/ drinks and atmosphere. The food was so creative and unique and not like anything we’ve had before and makes you want to come back throughout the year to try what will be on next season. The alcoholic and non alcoholic pairings really added to the dishes and were great to try so many different kambuchas with the non alcohol pairing. Staff were attentive and all service we received great detail of the dishes and answered all questions about the process they used to make certain parts. Was a great experience and look forward to visiting again soon!

Go for the July - September menu to get the garlic - it really should be world famous

We had a dinner "Bos menu" and it was a great comfort experience. The course started with what I call "forest dashi", followed by many beautiful and well designed small dishes. The nut pate with aardeperen was great, reindeer moss and maitake made us particularly happy. Also the home brewed non alcoholic beverages were very nice. I loved watching the relaxed kitchen too. Our dietary restrictions were also carefully taken care of.
The restaurant is in the heart of Alkmaar and has a cozy atmosphere. I recommend here for all fermentation lovers.

We had an amazing experience yesterday! Staff was very attentive, we had a nice chat with everyone.
Everything locally sourced, interesting but amazing ingredient pairings and it’s fairly priced.

Special thanks to the guest speaker for switching to English immediately with no problem when learning that there are non-Dutch speakers among the guests.

My partner and I visited this restaurant a couple of weeks ago during our stay in Alkmaar. This was one of our favourite dinner experiences. The staff were welcoming, knowledgeable, and were able to translate everything in English for us! We had some excellent alcoholic pairings suggested to us to go with the food. Ingredients and drinks were all locally sourced, creative and just delicious! The theme was Forrest and they achieved this both through the food and calming atmosphere! Would highly recommend!

The concept of using only regional and seasonal ingredients and the creativity of the chef and his team are both extraordinary.

Great food, started with a 6 course meal but ended with 8. Nice combination of alcoholic and non alcoholic drinks . Some really new tastes and food combinations. An absolute pleasure to dine at Neder!

The dining experience is a set menu (they cater for vegetarians) where all the restaurant begin at the same time. There is an open kitchen where you can see all the dishes being carefully created by the team. The food was absolutely delicious and very creative. I love that all food is sourced locally and is seasonal. The staff explain every dish including it’s origins when they deliver the course to your table. All the staff were kind and knowledgable.

I loved the attention to detail here including the beautiful decor, the staff uniform and the concept of 1 sitting with an open kitchen, it made the experience very special and unique.

Hidden Gem! Spacious restaurant with a few tables. Service is very friendly and explains the dishes, also in English. Dishes are small, but enough during a 5 course menu. They taste like heaven and are artistically decorated! The menu is fixed, but allows options between veggie and meat. Prices are appropriate for that high quality. Wine choice is very fitting. All in all a exquisite restaurant, in particular for dinner.

We had a superb dinner at Neder. Service was personal, atmosphere was open and warm, food was outstanding. Very much appreciate their approach to the menu, and attention to detail. Amazing concept and execution. Don't miss the chance to eat here.

Super happy we finally went here! It's a relatively new place in Alkmaar which serves incredible locally sourced food/ingredients only and giving it a Dutch twist. A must go if you are into good food and a good time! Bedankt voor het heerlijke eten :) tot ziens!

Absolutely fantastic concept and execution. The flavors and ingredients are unusual and unique, it must take so much passion and love to invent and execute such a menu with ingredients only found in the Netherlands! And the pairing with the wines and beer! Super friendly service, Peter was so nice and ready with explanations and a friendly chat. We had an awesome time. Thanks to Thijs, Max and Luc in the kitchen, and Peter in service. It was a special evening that we thoroughly enjoyed. It won't be the last time we go there!!

Maybe the best experience in the Netherlands when it comes to true Dutch food, flavour, drinks/food pairing and hospitality!

We had a wonderful evening with you. Your concept is well thought out from the greeting to the farewell. Against any prejudice, Dutch cuisine is in the best hands with you.
The rooms are furnished with style and love, the view into the open kitchen is an adventure, your calm in the evening service fascinated me. The food, the wine and non-alcoholic drinks that you only take from the Netherlands is a successful masterpiece for me.
The service is extremely friendly and courteous! A role model for me!
The products were presented to us with their origin and preparation method, even the wines (all from the Netherlands) were described to us by the courteous service.

The only criticism:
Each of your homemade kombucha is a taste explosion, in some courses the kombucha accompaniment drowns out the wonderful menu.

Excellent concept of Dutch only ingredients, really worked out to make really creative choices. This goes from the table linen to the excellent cooking. Especially the non-alcoholic pairings with dishes was very special and very, very recommended. In general, wine pairings were excellent too. If you eat here, definitely take either pairing, you will be amazed at the quality of the (Dutch!) wines and drinks. Lots of different styles of fermentation on offer. Service was friendly and infinitely more relaxed than the often worn down staff you see in other fine dining establishments. These guys look like they're having fun doing what they're doing

Giving 5 stars for the potential, some flavours and dishes aren't yet refined enough to warrant the price point in my opinion (eg. Field pea cracker tasted basically of field pea and wasn't super elevated, red beet jelly with horseradish was very beetroot-y and could have worked better with less of the jelly on the plate etc.), and it's closer to 4 stars for me as a current experience. For this price point, dishes could be a little more balanced (some dishes were very one - admittedly delicious - note), service could be a little bit better (serving staff couldn't always talk authoritatively about the dish, wine pairing sometimes brought out a little later than the dish), and generally the details could use slight upgrades (eg. potato dish was hard to slice effectively with provided tools, plates were often a little small with little room to maneuver for slicing and portioning the food, had to request a spoon for certain dishes). They're all little things, but I think the restaurant has Michelin aspirations and isn't quite there yet. But every dish is an experience in and of itself and well worth it, looking forward to eating here again in a couple of months for another season :)
