I thoroughly enjoyed my experience in this cheese shop in Edam. I've been to local cheese shops all over the Netherlands in the past month, and this one had the friendliest people and the best cheese, by far. A young woman explained to us where they make their cheese (on their own farm down the road). It always improves the experience to hear the back story on the cheese you're buying. We had a nice chat with the owner (presumably), who told us why supermarket cheese with the red wax is so rubbery. He also explained how they store their own cheese, as well as how the aging process changes the texture and flavor of the cheese. Very interesting.

When I enter such a shop, I know that the cheese is a bit expensive. But the selection is huge and I was able to try countless varieties that I had never seen or tasted before. Perfect souvenir from Holland. They offer wide range of cheese (many tastes like garlic, honey thyme, coconut, classic; and different types: not only cow but also goat). You can taste each to see if you like it. They sell also tasty stroopwaffles. The staff is not pushy but very friendly and if you want help they explain everything.

The lady in the store was soo friendly! I loved the smoked cheese.

Henri Willig cheese factory was a featured stop during the bus tour Holland country side that included cheese making, windmills and clog workshop. I had seen a cheese store selling Henri product in Amsterdam city, so I figured Henri is a major cheese producer in Amsterdam. First, a factory worker explained the cheese making process. The demonstration included the tools used to make cheese, and a description of the various processes and time it takes to make good-quality Gouda cheese. Next, we were led to the cheese tasting room. There were at least 30+ varieties to sample. Needless to say, everyone was cheesed out. My favorites were cumin-flavored and hot-pepper Gouda cheeses. The cheeses were made from cow, goat or sheep milk. The aged varieties (1+ year long) were specially good. The shop also sells Dutch baked goods like stroop wafel. Visitors can buy a ton of cheese and confectionary at this place. A wonderful experience for Amsterdam visitors indeed!
