Birrieria Chololo

My boyfriend took me here to experience not only the history and atmosphere but the delicious food. Being from Sweden I’ve only heard and had to imagine the dish Birría.

We don’t eat goat in Sweden so this was completely new territory for me. The condiments, the consommé, tortilla, salsa and meat were all great. As well as the service.

Me and my boyfriend are very interested in the history and origin of places and events, so the fact that the waiter took his time to tell us about this place was very welcomed! Did you know that Chololo is over 180 years old? This specific restaurant has been around for 60 of them. I can see why they’ve opened up several locations.

If you’re ever in the area, do stop by, I highly recommend it. Not only for the food but for the great service as well as the traditional coffee which is made with cinnamon and refined cane sugar.

Oh I’ve got a story to tell. To start with, this is the first location for birrieria chololo. Now there are plenty more and size wise, this is the smallest. A fair warning that this place like many most places is cash only transaction. We got there in an Uber and only had a small change for cash. The folks here attended to our need and even asked one of the young server to accompany me on my mission to find 🏧 machines or cash backs. Friendly folks, extremely attentive service, great tasting food (we trusted the advise of our server and he didn’t fail us) we had the goat meat and the beef birrieria. The place is small enough to be cozy but spacious enough to not make you feel like you are in a crowded place even when it’s full. All beer and tequila tastes good here 😂 don’t ask me why. We were even given a gift 🎁 - a souvenir sombrero made of clay with an inscription that says “Birrieria Chololo”. We are definitely going back here whenever we are in town!

Worth the trip! Get the goat birria WITH bones and fat. The cuts they give you are amazing.

This place is very traditional birria slow cooked goat meat with spices. Arrive by 11am and you are guaranteed all attention and amazing service. Arrive 2pm and be ready to wait a little bit to be seated.
There are not many choices on the menu of one goes there is bc you want to eat birria or aome part of goat meat. You can also have the amazing broth they serve on the side of goat is not for you.
The mint pineapple juice water is amazing too. And then at the end the amazing price value keeps you smiling.
Yes, location is a bit off the grid but as a tourist foodie this is the kind of place you want to visit. I'll be back any chance!

What a special experience - all other birria simply cannot compare to Chololo. Get all of the options - all of the different cuts, the beans, the consommé, extra tortillas and be prepared for one of the best meals in all of Mexico. The service was kind and thoughtful - that alone was worth the trek from downtown Guadalajara. This was the standout meal of my stay - go!

They are known for their goat meat. I tried a taco and I must say it was delicious 😋. Will definitely be going back

One of the best birrias I have tasted. Meat tender. Asked for the birria without bones. It was awesome. Flan was excellent. So I found out this was the original Chololo. The other Chololos are relatives. Here you will find a different menu. Only birria. Highly recommended.

Among all the birria places in Guadalajara, and its surroundings, Chololo is by far the most suitable for everybody. Flavor is outstanding, so is the amount of servings, and you will not be spitting fire, as the food has spice but no excess of pepper. It's a must if you want to know the real local flavor, and is surprisingly inexpensive. Birria has been a special plate among these places, only made in occasions such weddings and birthdays; you will know why. Don't be afraid; once you discover the true flavor of Mexican food, you'll never regret it.

When we arrived it loomed as if we'd be waiting for a while to be seated but it was actually less than five minutes. Tye food was excellent they recommended a platter for four people and in truth it could have served six people easily. The food was really good the flavours were strong but even our pickiest eater ate with gusto. There were mariachis singong around us. For entertainment.In short it was a great food experience. If I am ever back in guadalajara I would definitely go back to eat at Chololo's

Best birria in town, the carnaza and the beans with cheese are awesome and the consome is just 5 star food.

This was the most typical jalisciense (from Jalisco) Dish (birria) I've tried, and it was exquisite. The place looks ok without pretension, but the food and service was ouregious!
