Can’t get enough of the ricotta hotcake, I also love the sweet corn fritters, goes so well with the avocado salsa. I wish they open a branch on the North Shore near the train line, then I could visit every weekend! The only negative part of this place is the coffee, I find it too bitter, but that is just personal taste preference.

bills lives up to the hype 1000% and there is a reason why it’s a breakfast and brunch institution in Sydney - the food is bloody good and the vibes are just right.
I had the ricotta hot cakes because it’s their signature dish and it’s listed as one of the ‘19 must try dishes in Sydney’. The are simply superb - the fluffiest pancakes ever and the taste is spot on, not too sweet and the banana is the perfect companion.
The service is perfect and it’s just a really great chill out vibe - the booth seat is comfy. Love it 👏

My favorite brunch restaurant in Sydney!
I tried several brunch restaurants in Sydney and Melbourne and Bills was the BEST one.
On my last day in Sydney, my flight back home was 12PM. So I woke up at 5AM just to go to Bills in Surry Hills.

All the staff were friendly and the ricotta cheese pancake was SOOOOOO delicious!!
I recommend to add strawberry. I loved flat white. But squeezed orange juice really matches well with pancake. 😍

Went in around 2pm on a Sunday, still busy, 5 mins wait for 2ppl so not bad
Can’t go wrong with the pancakes, they do ask if you would like strawberries as well to go with it. Cheesy Kimchi open sandwich is really a toast - zesty flavours

Great fresh food. We enjoyed everything. The service was excellent. We loved staying outside and enjoying our dinner on this summer evening. There are many options on the menu; it is hard to choose, everything looks good.

Still love it! Despite their “fame”, staff is always super nice, doesn’t make you feel stressed or pushed even when it’s crowded. My order was forgotten so I had to wait for a long time but they apologised and made a very kind gesture which was super appreciated as it’s not that common and makes me want to come back even more! Thank you! And their ricotta hotcakes are still as excellent as they were 6 years ago…

I just had the best pancakes i’ve ever had in my entire life🤩. This breakfast was toooo good. The scrambled eggs are very good as well. A friend recommended me this place while visiting Sydney. I wanted to try both the pancakes and the scrambled eggs based on his recommendation, so I asked for a smaller portions of both. So if you order the regular dishes in the menu, I believe they are bigger. The service was good despite the place being crowded. Anyway, would 100% recommend!!! 😍

Hands down the best corn fritters I’ve ever had. Definitely worth a try if you go to bills, it won’t disappoint. Had a lovely Irish lady serve us who was an absolute delight. 10/10

Avo toast and hotcakes were both delicious!

I didn't even want the hotcakes, but I ordered them as thought one of the things that Bills is famous for... sssoooo glad I did, as I haven't been able to stop thinking about them since, absolutely delicious!

Would come back in a heartbeat if I lived closer! Next trip to Syd, it's on list! 🙌❤

The food here is worth the wait! I have heard of this restaurant for a long time and finally got to try it. The pancakes are a must, the butter is decadent and sweet while the pancakes are fluffy and light. The only thing that could have been improved is if the bananas are slightly caramelised.

The rest of the dishes we ordered being the corn fritters, fish and prawn curry, XO mushroom fried rice were all very tasty but not as impressive as the pancakes.

The peanut brittle was a good surprise as it had a very strong peanut flavour that balanced out the sweetness of caramel.

Cute and sunny brunch place. Their ricotta hotcakes were soft, creamy and fluffy, highly recommend. It came with three fluffy hotcakes which was plenty, and a banana.

Reading other reviews, I'm not sure if a "foodie" is now classed as a self-proclaimed subset of humans... either way, I like food ? Ricotta pancakes were absolutely delicious. Coffee exceptional. Great service. Would definitely visit again.

This place is very hyped, and finally, I decided to give it a try.

We ordered coffees, my espresso was very good and well balanced. The choice of beans for the coffee was good, and congrats to the barista. My wife had a strong cappuccino and was very good as well.

We ordered the ricotta hotcakes and the big breakfast. I can say the execution was great for both.
For the big breakfast the tomato was perfectly executed with a crust side, not burnt and not excessive soggy. The sausages were sourced well, good flavour and seasoning. Nice butter and espetacular eggs. Right flavour and texture. The bacon was a little overcooked for my liking.

The ricotta hotcakes were well executed with attention to detail to ensure every pancakes had a nob of butter.

In general good experience, need to go another time to see if the cases of bad service and inconsistent food is true. But for now, very good food and experience.

#### Update ####

As I said above, I did go again on a different time of the day. Last time I was there very early, no wait. But today I went close to 11:00 to be seated around 11:30. Very busy. We had exactly the same dishes and I can say, they were not as good. The ricotta pancakes were missing the maple syrup. The Aussie breakfast was mixed, just one slice of bacon very small and soggy tomato.
But to be fair, the eggs were still perfect, and the espresso was very good. Is worth it? Yeah, but probably will avoid busy hours.

Music is good, hot chocolate delish and they have veggie milks! Very good vegetarian menu! And everyone was very nice

Have been coming to Bills for 15 years+ and the ricotta pancakes are still hands down the best in Sydney. Nothing comes close to the fluffiness and whilst they look thick, they’re not doughy or dry. The corn fritters have also been a favourite for many years. The “full aussie” (big breakfast) is a little small in serving and doesn’t come with avocado so you have to pay extra. The scrambled eggs are really creamy and fluffy too. Even if you arrive before lunchtime peak hour, expect to wait minimum 30mins and if you come anywhere close to noon, it can be >1hr wait. Wish Bills opened more franchises in the suburbs.

Great Cafe with friendly and helpful service. I had the ricotta hotcakes and they were amazing. Coffee was great. They had colouring in sheets and pencils to entertain the kids while we waited and the babycinos came with lots of choc chips. What a win all round.
