Shout out to Abbey our amazing waitress for the drink recommendations the conversation and the laughs! Four pillars is just as great in Sydney as it is back home! Well fed well watered. Gin for the win.

Just a snazzy place! We beat the crowds at around 6:30pm on a Friday night. A few funky drinks which we couldn’t pass on! The highlight was the watermelon gin that had a hint of feta. We also ordered the one (forgot what it was called!) that had chicken salt. Staff were so friendly. Would recommend.

My friend and I passed by Surry Hills after dinner and we decided to go to this bar that named after its Gin brand. Love the design of the bar table. Ingredients and bottles are hidden under table leaving the table less messy. Bartender is so nice! He can tell that I don't like the cocktail I ordered and offered to make another drink for me.

I booked this place for my friend's hens to have a couple of drinks to start our night! I was absolutely impressed! The staff were all so lovely and hard working. They got all our orders correct and very attentive as well. We had a few snacks as well - which were delicious. The drinks were the highlight though! Extremely well made and presented so elegantly! Thank you team for letting us have a perfect night at your bar <3

Absolutely amazing evening at Eileen’s Bar. This is our new Favourite gin place. Stellar Staff, warm and friendly atmosphere with gorgeous decor. We ordered the Cheese plate which was divine. Our fav Gins were the Bloody and Lemon and the Nougat a friend in me! Yum didly! Highly recommend visiting this gem!

We recently hosted my partners birthday at Four Pillars Gin Laboratory, and I’d love to tell you all about it. From the moment we walked through the door, we were treated like old friends.

Amber was so professional, knowledgeable and made sure everything I needed was taken care of. She answered all my questions and concerns promptly and she ensured the evening ran smoothly without me having to worry about a thing.

The service that Simon and the team provided on the evening was outstanding. Our expectations were not just met, but exceeded.

I can't say enough about how beautiful the interiors are and I wouldn't hesitate to recommend Four Pillars to anyone looking for the perfect venue.

Cool vibes gin bar with great cocktails. Great to catch up pre dinner with friends. Good selection of non alcoholic cocktails as well. Try the Banana Bender, it’s fabulous 🍹 snacks available to soak up some of the booze 🥃

The space was even more gorgeous than expected, we were seated at the head of the bar, which had an incredible perspective down towards the other end of the space. The deep bar counter created a really intimate & moody atmosphere but still allowed interaction with the lovely staff.
I personally enjoyed the seasonal G&T, negroni and bloody Shiraz the most. Highly recommend for a special occasion, or as a special “because” for anyone special in your life.

Visiting this gorgeous venue never gets old. Staff are full off positive energy and always make you feel great.

Delicious cocktails with equally good bar snacks. Plenty of creative, seasonal cocktails. Some overpriced misses here and there, but mostly winners. Dishes are simple and delicious (think cheese toasties with truffles or anchovies on toast)

Thoroughly enjoyed an afternoon at the lab recently! It was slick, polished and perfect for an afternoon - into - the - evening kind of drinks time and the snacks are as good as the drinks! Definitely go for the Gheenius, so delicious and make sure you get the salt & gin/vinegar chips and marinated olives, as we did!

Fantastic bar and incredible cocktails from Four Pillars. If you are a craft gin lover you most be know Four Pillars from Victoria.

Eileen’s bar has many flavor options for the cocktails I tried a few cocktails and all were amazing.

My favorite one is Oki Doki Hinoki, CHANGING seasons gin, Toji junmai, Hinoki, Yuzu. I never have gin x sake base cocktail

New to Surry Hills is the Four Pillars Gin Distillery, retail shop, cocktail bar “Eileen’s” and the Four Pillars Drinks Lab, where you can enrol in a gin masterclass.

I’ve been to their distillery in the Yarra Valley, Victoria many years ago and absolutely love Four Pillars Gin. So when I heard they were opening up in NSW, I knew it would be a place to visit. We made sure to book ahead and it was necessary, for it was booked out for weeks. We were excited to get a booking for a group of 4 and headed in one Friday night for our gin experience.

From the street you’ll be first met with a brightly lit gin sign. This shop frontage shows off the retail shop which sells their small-batch gin varieties as well as the mainstream options.

For the bar, line up outside and the maître d will let you in and ascend upstairs right on time for your session, which is booked in 1.5 hour time slots. Eileens Bar is named after the giant copper still dominating the Lab which is attached to the bar and used to run masterclasses. For the bar, you make a booking with a $20 deposit which comes off your bill at the end.

This gin bar is out of this world good, The incredible range of cocktails shows the versatility of gin in their creations. From their dry gin, spiced Negroni gin, navy strength gin, modern Australian gin, Changing seasons gin, Sherry cask gin, Chardonnay gin, or a current popular choice is their limited edition rare Shiraz gin. You can try on the rocks, with tonic or as a cocktail.

This bar has some of the best cocktails we’ve had to date. So many flavour options for the cocktails we tried a few and all were impressive.

Bear Hug - bloody Shiraz Gin with pickled pear, pistachio and cassia

Inner Bloom - modern Australian gin, Davidson plum, macadamia and blood lime

Oki Doki Hinoki - changing seasons gin, toji junmai, hinoki, yuzu

Purple Yamos - bloody Shiraz gin, ube whey, citrus and whites

They do have classic cocktails, beers, wines and ciders, though I’m not sure why you’d want these when there are so many good cocktails. If you’re not a gin fan, the cocktails will undoubtedly change that.

The bar space is super cool, with bar seating, booths and tables. A dimly lit area with some lamps on the tables, and despite its expansive size, the lighting makes the space feel cozy and intimate. A centre bar dominates the space with neatly hanging bottles of gin. The colours are sleek, with natural elements; dark wood, exposed brick and black metal stools at the bar.

We are provided with some bar snacks; nuts
which are dusted in gin salt, and some popcorn. We order some salt and vinegar crisps as well as cheese and crackers with marmalade. There is some more substantial options like a Jaffle or party pies.

Our wait staff were excellent, the waitress that served us, Amber was extremely helpful and knowledgeable on all of the drinks. We get the sense that she has had great training but also loves her work, and the gin.

You do need to make a booking, but make sure you do way ahead of time as it’s super popular. We will most certainly return.
