This is Premium Beef. You can tell by the aroma and feel of the raw cuts that they have been properly aged and handled. The fat on every cut I’ve handled has been of superb quality: sweet, buttery, and nearly melting at room temperature.

Additionally; due to proper aging, the water content of bellhallow beef is much lower than anything you will find at the store. The end result is more flavor and more beef per dollar.
