Order your meal at the counter and they call when it's ready. No waiter, it's served on paper plates. Everything was delicious! Especially the shrimp and veggies in cream sauce. Also loved the enchilada sauce, and I'm usually picky about that. I love the condiment bar with fresh salsas & jalapeno. Mango salsa was sweet and made fresh. Highly recommend

The veggie deluxe chimichanga was delicious. Many Mexican restaurants rely too heavily on meat and cheese for flavor, but this place was able to hit the spot with sauces and veggies for a delicious end product.

Some of the best Mexican food we have ever had. Got the 3 taco plate with rice and beans. Asada, Pastor, and Carnitas. All the meats were great. The rice and beans were amazing. All the salsas from their salsa bar were great. The staff is super friendly. We will be going back for dinner tonight!

We had a wonderful time meeting, chatting and laughing with this Family who own and run this great addition to Lava Hot Springs. I’ve always wished for a Mexican Restaurant there and Taqueria Pelayo surpasses my hunger for really yummy Mexican food! With a fabulous variety of traditional options, good size servings, more than fair prices, real margaritas (no mixes here), an excellent salsa bar, plenty of room for groups of any size ANDDD best of all homemade corn tortillas, we’re looking forward to our next delicious visit❣

Best tacos ever! Service was friendly and fast. The food was delicious! We went back instead of going somewhere different our last night in town! Loved the salsa bar!

Visited with my kids and we were very pleased with the customer service. They seemed to be family and were very welcoming! The food was amazing as well!

We came here for a date night, i can honestly say this is the best food in lava! It cam out quick, hot, and was delicious. The adobada was seasoned to perfection and the green chicken enchiladas were one of my wifes favorite that she has ever tried. This will definately be the place that we visit everytime we return to lava hot springs!

Google says it’s a bus that’s permanently closed- could not be further from the truth! So glad we checked it out to see if it was really closed. The food was authentic and SO delicious! The food came out so fast and the price was great and the service was above and beyond 10/10 would recommend

Fresh, really good Mexican. Good fresh salsas. Surprisingly big city good in a small city of burgers and fried food.
Bisteque sauce was very good. Mango Pico was really good.
Homemade food compared to fresh frozen everywhere else in Lava that we saw. Best restaurant in town that we tried.

I’m so glad we have a sit down Mexican restaurant now! Full salsa bar with roasted jalapeños and spicy carrots, a nice menu with many offerings. We ordered the Mexican enchilada with red, white, and green sauce. It was large and full of chicken, rice and beans with fresh greens on top. I added cilantro and onions from the salsa bar, too. We also got the Fajita burrito which had nice grilled chicken and veggies. The horchata to drink was the best I’ve had- finally one that isn’t gritty! They call out your number over a speaker that sounds like it’s from the Peanuts (wah-wah-wah-huh?!) so stay close after ordering if you sit outside, food comes out pretty quick!

The lovely ladies here are always so sweet and friendly and their food served is always fresh and so dang good! We will always go for their tres leches cake and chicken enchiladas!

This place opened over Memorial Day weekend in 2022. This last weekend in April 2023 I visited twice. Once for lunch and once for breakfast. I’ll be back each time I visit the hot springs.

The best Colorado burrito ever. With steak. I have eaten at this place several times in the past few years. Can't seem to order anything else but the Colorado steak burrito. Sooo good. Hey, they even have a salsa / hot sauce bar. Who ever does that!

The BEST QUESADILLA I HAVE EVER HAD!!! Seriously. I got the carnitas pork at the chefs recommendation (I think he was the owner? Very friendly and helpful. Easy to communicate with and knew the menu well!) with veggies and it had peppers and mushrooms. It was so fresh and delicious. I would drive far out of my way to come again. It was the coolest bus restaurant! Very clean and unique. So fun! And delicious. 👌👍🙌😋

The staff are very friendly and helpful. The food was 👌 great. We ordered our food and it was finished fast and was nice and hot when we received it and it was exactly how we ordered. They offered various salsas that you could add to your meal. I had the shredded beef chimichanga, and my wife had a chicken chimichanga. The pricing was reasonable for the amount of food served.
