My first goose, wow! Super mellow and tender. Legs and wings remind me of veal, and the breast is like roast beef. I cooked it medium done, reducing the temperature every 20 minutes from 435 degrees, 365, 325, and then 1 hour at 200. Perfect. Trimmed and rendered fatty skin before cooking, then into to the oven with the baking goose. The skin turned out like fine bacon. I don't think I'll ever eat turkey or duck again without wishing it were goose.

The only place I was able to find fresh goose! I'm ordering my Christmas goose for years at Schiltz Foods, Inc., and was never disappointed. It's delicious!

Picked up a frozen goose at our local Publix. Roasted goose at Christmas is a tradition for us. This was far better than any goose we've ever had. Far meatier and more tender than the usual super market fare. Shultz Foods geese from now on.

Whole smoked goose is excellent with on-time delivery and fail-proof cooking instructions. Next one to try will be the whole roasted goose for New Year's!! But order early as they sell out during the holidays
