Vargas Restaurant Bar & Grill

We stopped here on the way home from a job. I had the Vargas special and my wife had the Sonora plate, we both VERY MUCH enjoyed the food and attentive service. There was initially a small issue in that our server did not speak very much English, but we got over that. This is a delightful place, a fabulous building, and great staff. We would absolutely visit here again.

Nice restaurant with a good atmosphere. Let’s start with the chips and salsa. Very good. The chips were warm, the salsa had a nice tomato flavor with just enough spice. We also ordered a cup of queso, which was good as well. We both got the 3 enchiladas plate with 1 beef, 1 chicken and 1 cheese. All 3 were very good. But the chicken with the sour cream sauce was my favorite. Our server was very good. Food came out quick. We’d definitely go back if we’re ever in Liberal again.

My girlfriend Maggi and I were riding motorcycles on our way to Santa Fe, NM from Kansas City and we decided to stop in Liberal KS for the night. It was about 5:00 when we decided we wanted Chili Rellenos and found the Vargas Restaurant made them. We arrived and were seated by a very accommodating hostess, within seconds, here comes the Chips and Salsa. Followed right up by our server, Matilda wanting to take our Drink order. For Dinner, Maggi ordered the Chili Rellenos and I opted for the Ala Carte, Pork Burrito and a Chicken Taco since we were splitting one of the Two Chili's Rellenos. Wow Oh Wow, we were so happy with our choices. The Special Red Sauce on my Burrito was incredible and the pork was tender and juicy. The Chili's Rellenos were Deep Fried in a Crispy Crunchy Batter and filled with Beef and Cheese and the Pabano Pepper was Tender and Spicy. I Love This Place

My Wife and I stopped by for Dinner. We enjoyed a Wonderful meal, and were given Great Service. They have plenty of seating space, so next time you get hungry, be sure to come eat at Vargus Restaurant.

This is a wonderful Mexican restaurant! The owner & waitresses were very friendly & gave gr8 service. Wait time was short & the food was delicious.

I enjoy eating at Vargas's Restaurant. I've been eating there for many years now. (That should tell you something) . The food is wonderful. There is such a variety to choose from. The staff is very friendly and they are very attentive to their customers. It's a family and friends dinning atmosphere or a small one or two at a table. They have a bar where you can get mixed drinks or just get Beer of your choosing.. They have several overhead TVs to watch.
I would recommend Vargas Restaurant to those who like that hometown family community atmosphere.
PS....my favorite is the chips and salsa. Many times my kids and I would call ,get take out for just the warm chips and salsa. Thanks for being one of my many favorite places to eat.

I love this restaurant. It has a lot of options that you don't find anywhere else. They have numerous seafood plates- the shrimp tacos are fantastic. The guacamole is real (not full of sour cream and fillers like other places). They even have a taco option with romaine lettuce leaves in place of taco shells, and it comes with whole beans (It's actually really good and the portions are huge, I always end up a to-go box when I get it).

Waitress was very friendly. Quiet atmosphere. My son and myself ate and after we ate we stayed to visit and we weren't rushed to pay our bill. Food was good I had a tostada with ground beef although I didn't care much for the ground beef I was satisfied with what I ordered,as I only eat 2-3 oz of food .my son ordered the shrimp flautas he said it would have been better if it were served with all the toppings on them but he still enjoyed them. We will be back when the husband comes through.

This has always been my go to for Mexican in Liberal. Food is always delicious and hot. In a hurry for lunch? Our lunch arrived in less than 5 minutes today. Good salsa and thick crisp chips. Always great service too.

Well, based on the reviews of this place, I was avoiding eating here like the plague. I wound up in Liberal one night on business, and stayed at the hotel next door. Feeling bullet proof, I wandered over and ordered a jumbo margarita. It was not bad, not too sweet and just your garden-variety house margarita. Like some of the other reviews stated, avoid the chips and salsa. The salsa is served in squeeze bottles, and when you put some in your dish, it kinda makes weird bubbles in its own, like theres a little fermentation taking place in the bottles. No thanks, I gave up science experiments in high school. The chips are equal to or worse than the salsa. After looking at the wonderful pictures on the menu I decided on the shrimp tacos and the shrimp soup. I want to preface my next comments by saying that I am extremely hard to please. I like things fresh, with a lot of flavor and with the prices that we have to pay lately for restaurant food, I'm looking for good value and portion size. I'll have to say that the shrimp tacos were among the best I could ever hope for. The shrimp soup was deep, and rich in flavor, with lots and lots of fresh shrimp. Bottom line, if its like this here all the time, then the bad reviews are totally undeserved. If I hit it just right, on a good night and just lucked out, oh well, even a broken clock is right two times a day. With fresh homemade salsa, and some good chips, and maybe some fresh, prepared at your table guacamole, this place would rock. You decide.

UPDATE: Just returned and ate some great food, fresh, and very well prepared. Really folks, I am not a friend or relative of the owner, I just really can't understand the bad reviews! (And I love to give bad reviews LOL!)

I love it here the service is great and waitresses are really nice. The Food is great. Don't let the rude comments get to you most of the time its just people from another business trying to get clients!

Vargas is my favorite restaurant in Liberal. Me and my family eat there as often as possible. They have the BEST salsa. I order a #8 and it's only $6.95 if I'm not mistaken. 2 beef enchiladas, beans, and rice. It's a steal!!!

The restaurant is very clean and the people who own it is very polite and friendly. The food is very good. And the employees are very friendly and nice.

Food and service were both very good with large portions and great prices. Servers were very attentive and we were a large group of 10.
