This is a very good restuarant which makes every dish from scratch. Including the tortillas! PALENQUE can have a thousand visitors, a hundred or just a handful on any given day. With that said expect to be on their time not yours. Expect to wait a while for your meal as this is not a McDonalds or an airport bar. Remember you are a visiting guest in Chiapas, a state still run by Zapatistas, which are pretty much freedom fighters. Do not expect to find men or women in this area of Mexico open to being criticized or spoken down to. If you get sick it's not because of their food, it's most likely the ice. Many times the ice is not made from filtered water. All ways have drinks from a sealed bottle. Do not mix sealed drinks with locally frozen ice. Only use ice when you are certain of its origin. Same goes for coffee and tea, unless you are certain the water that is being used was filtered or properly boiled you yourself are looking to get sick.

Be down to earth and kind and you will have a very favorable experience. Make it clear that you are entitled or better then the staff and get ready to wait. I expect to wait between 30 and 45 minutes for food in most restaurants in Chiapas. I never get upset about a wait time of an hour or even an hour and a half when large groups are present. If you havent noticed these are very basic kitchens, usually a single cook and a single waitress. They do not care if you only budgeted one night to see their beautiful state. If you are concerned about waiting for your food, purchase ready made to go food from other sources. Dont bring the Kardashians Attitude here, you wont enjoy the outcome. These people are not war stricken impoverished souls waiting for your generous charity. These are proud people who demand respect and will only reciprocate it, never blindly offer it.

Dont bring your western civilization bull shit either. Your choices are limited to a few restaurants and a few convenience out posts. It's either wait for hot, delicous, fresh food, or chips and soda for you. They choose to stay and life here you are only visiting. Oh yeah obviously the food is unbelievable. Dont provide too many instructions and you will enjoy the outcome. Be humble folks. All parties over 6 persons are mandatorily imposed a tip. Mostly because big groups are a lot of work and many visitors are cheap. You know which you are. We have never had an issue with tipping and always tip more than the mandatory amount and oh yeah we get treated like royalty for that. Dont be one of those visitors that acts like they are a local. Most likely you will never ever come back. Be simple, humble and kind and you will really enjoy your time here in Chiapas. Can not stress that fact enough. They dont care about any attitudes you are traveling with.
