Mizutani Sake Brewery

We were lucky to be able to do a private tour of this business.
It is very unique, not commercial by any means, but an incredibly genuine insight into how sake is made.
We were met by the owner and fifth generation sake master Mr Mizutani and his young but amazingly talented apprentice.
They had translated their short presentation into English especially for us and spent a long time showing us how just the two of them make many thousands of bottles of quality sake by hand each year.

Their hospitality, attention and genuine personality was amazing and we would recommend a visit to anyone if possible.

We paid 1500 yen per person to visit, but bought sake and some of this seemed to come off the final price. Not sure exactly how much or how this worked, but we paid less for the hand made sake than we expected.

千瓢をつくっている酒蔵さんです。主な銘柄は、千瓢、めぐる、奏があります。前者2つは4合で1500円しないくらいの本醸造、奏は4合で3000円しないくらいの純米大吟醸になります。特に原酒千瓢は21度の高度数ですが、そうとは思えない飲み口を持った他にはない味わいです。蔵の見た目は一見ただの民家ですが、玄関に販売スペースがあり直販をしています。蔵元さんはお米からの酒造り体験や試飲などのイベントも多数やっており、おもにfacebookで情報を発信しており、そちらもチェックするのをおすすめします。

千瓢 原酒を美味しく飲ませていただきました　飲みやすいため蔵人さんの言われた通り久しぶりに酔ってしまいました　ふらっと酒造を検索して寄らさせていただきましたが正解でした
辛口の原酒も飲みたいと思いますので、また寄らさせていただきます

まだ行った事ないので、今度、吟醸酒買いに行きたい!しぼりたて原酒は、冷やでも、ロックでも最高!

名古屋旅行の帰り道に寄せてもらいました。失礼ながら、一見玄関口に立ったときは「蔵、ホンマにあるんかな⁉」と思いましたが、立ち入ると当主⁉が出てこられ会話の中でオススメもわかり、日本酒好きの連れのお土産も買いました。
当主仰せのとおり食中酒むきかと、お燗も試してみようと思います。
若くして入られた杜氏さんの活躍にも期待してます。またタイミング合えば神戸からお邪魔しますね！

At Mizutani Brewery, we pay close attention to the quality of the rice harvested and the fluctuating climate, and delicately and sincerely work with the koji and yeast. Our goal is to make sake that is pure, soothing, and enjoyable to drink.

After stopping selling sake in vats, the brewer continued to make sake by himself. Mizutani Sake Brewery is a brewery that attracts people with its reliable sake quality and personality.
Shizukutori" was born this year when a young woman with a passion for sake jumped into the harmony between the brewery and rice farmers.
This is a junmai daiginjo made in Aichi using Aichi sake rice and yeast, carefully crafted with a lot of time and effort, and gently pressed using the shizuku-tori method.

愛知県産の酒米と酵母を使用し、手間暇かけて丁寧に造られた純米大吟醸を、しずく取りの手法で優しく搾ったものです。

２５歳の女性杜氏で有名になった水谷酒造！だけど、蔵元さんもとても江戸時代から続く酒造りを大切にしてる応援したい蔵で、お酒はもちろん！美味しい❤

江戸時代末期からの造り酒屋さん　　昔ながらの建物が残念ながら焼失してしまいました。

建物は老朽化しているが若い女性杜氏候補が入り将来性を感じる❗地域流通米を使った酒造りの取り組みもいいね‼
